How To make Garlic and Ginger Chicken Baked In a Clay Pot
4 lb Frying chicken
2 lg Garlic cloves, minced
1 Knob fresh ginger, grated
Salt and pepper, to taste 2 ts Asian sesame oil
I highly recommend the romertopf type clay pots. Especially for chicken. I've done several chicken recipes in mine and they all came out extremely savory and done to perfection. There's a unique, rich flavor that seems to typify food cooked in this way. Haven't tried this one yet, but it's high on the list. The ingredients are Asian, the technique Western. The result, I imagine, is delectable. It's a very simple recipe. At least the first time I'd resist any temptation to embellish it. Well, maybe a few fermented black beans... ;-} Rinse the chicken inside and out and pat dry. Work your fingers under the skin of the chicken, carefully loosening skin from flesh across the breast and legs. Mix together the garlic, ginger, salt and pepper; rub evenly under the skin. Brush the chicken with sesame oil. Soak a 2-quart unglazed clay cooking pot in cold water to cover for 10 minutes. Drain and place the chicken breast-up in the pot. Cover and place in a cold oven; turn the thermostat to 475F and roast for 1 hour. Remove pot from oven and place on a towel. Put lid on another towel. (The hot clay will break if placed on a cold surface). Transfer chicken to a heated serving platter and drizzle with some of the juices left in the pot. Serves 4. PER SERVING: 515 calories, 76 g protein, 1 g carbohydrate, 21 g fat (5 g (5 g saturated), 229 mg cholesterol, 194 mg sodium, 0 g fiber. Andrew Schloss, San Francisco Chronicle, 11/23/92. The Chinese Clay Pot Rice Recipe I Made People Order the Day Before
When I ran a secret kitchen, there were some items on the menu that required extra prep so you would have to order them 24 or 48 hours ahead of time, sometimes even a week. That doesn't mean this recipe is difficult—once you have the ingredients you want to use like pork belly and Chinese sausage it's really easy to put together. Think of it like an oven-baked Chinese rice casserole... only way more flavorful than that sounds.
Ingredients
1 Cup of long grain white rice, rinsed
1 slab of cured chinese porkbelly, sliced
3 Chinese sausages, sliced
2 tsp chicken powder
2 tsp sesame oil (if not using porkbelly)
Spices: bay leaf, star anise, toasted cumin
Directions
Preheat the Oven to 400º
Place the rinsed rice into a small claypot, mix with sausages, and fill with 1 cup of water mixed with chicken powder.
Add spices
Place in the oven, reduce heat to 375º and bake for 25 minutes, middle-low rack
After 25 minutes remove from the oven and either drizzle sides with sesame oil or top with porkbelcy and place back into the oven for 20 minutes more.
If desired finish on top of a hot burner smelling for when a toasty rice smell develops but paying attention nothing smells like it's burning. Burnt rice will ruin the whole thing

Roasted chicken with mushrooms is such a comfort food for me. Cooking it in a clay pot makes for a fantastic flavor and moist, tender chicken.
Serves 4
Rice
225 g (1 cup) long grain rice, such as jasmine or basmati
250 mL (1 cup) chicken stock
10 g (1 ½ Tbsp) peeled and finely julienned fresh ginger
2 green onions sliced
1 kg (2.2 lbs) fresh chicken, cut into large pieces (bone-in)
45 mL (3 Tbsp) soy sauce
15 g (1 Tbsp) granulated sugar
15 mL (1 Tbsp) oyster sauce
10 mL (2 tsp) sesame oil
2 cloves garlic, minced
black pepper
15 g (1 Tbsp) butter
225 g (1/2 lb) gourmet fresh mushrooms, sliced
Directions
1. Preheat the oven to 190 °C (375 °F). If using a claypot, soak it in water for an hour before using.
2. Stir the rice, stock, ginger and green onion in the claypot. Top this with the chicken pieces in an even layer.
3. Whisk the soy sauce, sugar, oyster sauce, sesame oil, garlic and black pepper together and set aside. Heat a sauté pan over medium-high heat and add the butter. Add the mushrooms and sauté until they are tender, 5 to 7 minutes. Add the soy sauce mixture and immediately remove the pan from the heat. Spoon the mushrooms and the liquid over the chicken. Cover the claypot and bake for 60-75 minutes, until the chicken is cooked through. Serve immediately.
