How To make Ginger Spicy Chicken
2 Whole chicken
-breasts,split,boned,skinned Salt as desired 2 tb Vegetable oil
1 md Red pepper,cut into 1/4 by
-2" strips (1 1/2 cups) 1 md Green pepper,cut into 1/4 x
-2" strips (1 1/2 cups) 1 8 oz can juice pack
-pineapple chunks,undrained 1/2 c Picante sauce
2 tb Chopped fresh cilantro or
-parsley 2 Or 3 tsp shredded fresh
-ginger or 3/4 to 1 tsp. -ground ginger Lightly salt chicken.Cook in oil over medium heat until lightly browned and cook through,about 5 minutes.Remove and reserve.Add remaining ingredients to skillet;cook,stirring frequently,5 to 7 minutes or until peppers are tender and sauce thickens.Return chicken to skillet;heat through. Makes 4 servings.

Sweet and Spicy Ginger Chicken
Servings: 2
Ingredients:
400g chicken (14 ounces)
1 tsp ginger
1/2 tsp garlic
1/4 cup soy sauce
1/4 cup brown sugar
2 tbsp water
1 tbsp sesame oil
1 tbsp rice wine vinegar
1/4 tsp black pepper
1 tsp chili flakes
Thicken sauce with 1 tbsp flour + 2 tbsp water
Serve with jasmine rice and your choice of vegetables
Add sesame seeds for decoration

This is a great method for getting crispy-skinned chicken wings in the oven without any added fats. Tossed in a flavorful glaze full of spice, sweetness, tanginess and freshness.
Inspired by Alton Brown who first showed me the baking powder method back in the day, and by Chef John who gave me cooking time tips for this method. Of course, this is my own spin on it, and I encourage you to do the same.

Spicy garlic fried chicken (Kkanpunggi: 깐풍기)
Kkanpunggi is spicy garlic fried chicken stir-fried with vegetables and a sweet and sour sauce. It’s a Korean Chinese dish, originating in China but modified to suit Korean tastes, with Korean ingredients.

Hot and Sweet Chicken | Spicy and Sweet Chicken Recipe | Hot and Sweet Chicken Restaurant Style | Chinese Hot and Sweet Chicken | Hot and Sweet Chicken Recipe
Ingredients for Hot and Sweet Chicken:
- Boneless Chicken cut into strips- 300 gms
(All measurements using US spoon measures)
1st Marinade :
- Salt- 1/4 tsp
- Pepper Powder- 1/2 tsp
- Dark Soy Sauce- 1/4 tsp
2nd Marinade/Batter:
- All Purpose Flour (Maida)- 2 tbsp
- Cornflour- 2 tbsp
- Baking Powder- 1/4 tsp
- Salt- 1/4 tsp
- Egg white- 1
- Chilled water- 3 tbsp
Hot & Sweet Sauce :
- Tomato Ketchup- 4 tbsp
- Red Chilli Sauce- 2 tbsp
- White Vinegar- 2 tsp
- Honey- 2 tsp
- Dark Soy Sauce- 1/2 tsp
Other Ingredients:
- Ginger chopped- 2 tsp
- Garlic chopped- 3 tsp
- Spring onion white, chopped - 4 tsp
- Spring onion greens, chopped for garnish- 2 tbsp
- Refined oil- 1.5 tbsp + oil for deep frying
- Water after adding sauce- 2 tbsp
Preparation:
- Wash and leave the chicken pieces/fillets to drain.
- Pat dry if required and cut them into 2 inch strips.
- Add the ingredients for the 1st marinade and set aside for 20mins.
- Add all the ingredients for the Hot & Sweet sauce in a small bowl and give a mix. Set aside for use later.
- Chop the ginger, garlic, spring onion white and green. Set aside.
- Add all the ingredients for the 2nd marinade/batter to the marinated chicken and mix well.
Process:
- Heat oil for deep frying in a skillet or wok or kadai.
- Once the oil is medium hot, take battered chicken strips one at a time and drop them in oil side by side to not crowd the pan.
- Fry the chicken strips on medium heat, turning & frying the pieces for 5-6 mins till golden in colour. Take it out & repeat the same with the next batch.
- Now take a wok or kadai and add 1.5 tbsp oil.
- Keep it on high heat and add the chopped garlic. Give a stir and then add the chopped ginger. Give a stir again and then add the chopped spring onion whites. Stir fry on high heat for 30 secs and then add the hot & sweet sauce. Mix and continue to fry on high heat for another 30 secs till the sauce thickens. Add 2 tbsp water and continue to cook it on high heat for another 1 min.
- Now add the fried chicken strips, give a mix and continue to stir fry to coat the chicken strips well with the sauce. This should take around 2 mins.
- Garnish with chopped spring onion greens. Toss it well and serve hot.

Chicken Marination:

Chicken - 750gms (Each piece 40gms)
Turmeric powder – ½ tsp
Salt (According to taste)
Ginger Garlic paste – 1 tbsp
Fresh lemon Juice – half
Marinate for 30 Mins
Ground Masala Paste:

Cinnamon – 1 inch
Black pepper – 1 tbsp
Coriander seeds – 1 tbsp
Cardamom – 3
Cloves – 3
Dry Red Chillies 6-7
Fry for 3-4 Mins on Low Flame
Let them cool & Grind into fine powder
Add Garlic pods – 20
Grind into slightly paste
Keep aside
Onion – 1 Indian Medium Size (150gms)
Making:

Oil – 4 tbsp
Add Chopped Onions
Fry for 5-6 Mins on Medium Flame
30 Mins Marinated Chicken
Fry for 2 Mins on High Flame
Close lid & leave for 3 Mins on Medium Flame
Leave for 3 Mins on Medium Flame
Leave for 15 Mins on Medium Flame
Curry leaves – 3 stems
Fry for 3-4 Mins on Medium Flame
Ground Masala paste
Fry for 2-3 Mins on Medium Flame
Red Chilli Powder – 1 tbsp
Fry for 4 Mins on Medium Flame
Sprinkle Coriander leaves
