How To make Glazed Almond Brie
1 3/4 oz Wheel imported Brie cheese
- well chilled 2 tb Confectioners' sugar
1/2 c Sliced unblanched almonds
Red & green seedless grapes - in clusters, for garnish WITH A SMALL, flexible knife, cut away rind from top of chilled cheese. Be careful not to remove or split the rind on the sides. It will form a wall for the melted cheese. Sift 1 tablespoon of confectioners' sugar evenly over the surface and arrange almonds on top, pressing gently into place. The cheese can be prepared to this point as many as 2 days in advance. Cover loosely with foil and refrigerate. Bring to room temperature before heating, place rack 6 inches from heat source and preheat the broiler. Line large baking sheet with aluminum foil, place cheese on it and sift 1 tablespoon of confectioners' sugar over nuts. Broil cheese until top is evenly browned--about 1 to 2 minutes. Rotate cheese, if necessary, for even browning. Watch carefully so it does not burn. Use foil to lift cheese and transfer it to serving platter. Tear foil and gently remove it. Garnish with clusters of grapes. Volume I of Abby Mandel's cookbook, "Fast and Flavorful" (Cuisinarts Cooking Club, Inc., 1985).

Cranberry Pecan Baked Brie with a Honey-Maple Glaze
Try out this recipe as an appetizer or shared meal this holiday season, or whenever you're feeling cheesy!
Cranberry Pecan Baked Brie with a Honey-Maple Glaze
Yield: 6-8 Servings
Ingredients:
1 (8-ounce) wheel brie cheese
1/4 cup brown sugar + 2 tablespoons, packed
2 tablespoons honey
2-3 tablespoons maple syrup
1 -2 tablespoons unsalted butter
¼ teaspoon ground cinnamon
pinch of nutmeg
zest of 1 orange
½ cup pecans, chopped
¼ cup dried cranberries
Instructions:
Preheat oven to 350 degrees F.
Place brie on a rimmed baking sheet (lined with parchment paper) or an oven proof pan; sprinkle with 2 tablespoons brown sugar. Place into oven and bake until softened,12-15 minutes.
In a small saucepan, combine ¼ cup brown sugar, honey, maple syrup, butter, cinnamon, nutmeg and orange zest. Bring to a boil; reduce heat and simmer, stirring occasionally, until foamy and saucy, about 1-2 minutes (if sauce is too thick add a little more maple syrup). Stir in pecans and cranberries. Serve immediately topped with cranberry-pecan mixture. Garnish with figs (optional). Enjoy!
Tip: dried cranberries can be replaced with cranberry sauce :)

This Baked Brie in Puff Pastry is one of the easiest and most delicious appetizers you can prepare for holiday season or any other party. Not only it looks great but it tastes awesome too and is best served with crackers or toasted bread slices.

Ingredients
Makes about 8 servings
1/4 cup (70g) apricot jam
1/3 cup (60g) dried cranberries or raisins
1/4 cup (25g) toasted pecans or walnuts or almonds, chopped
1 sheet (9 0z - 275g) puff pastry, thawed
2 (4 oz-125g) Brie cheese rounds
1 egg, beaten
1. Heat the oven to 425°F (220C).
2. In a small bowl combine apricot jam with toasted nuts and cranberries.
3. Unfold the pastry sheet and divide in two. Cut off the corners of each piece.
4. Spoon the apricot jam mixture in the center of each piece of dough. Top with the 2 pieces of Brie cheese.
5. Brush the edge of the dough with beaten egg. Fold the pastry up over the cheese to cover.
6. Place seam-side down onto a parchment paper lined baking sheet. Use the leftover pastry scraps to cut shapes to decorate. Brush with the egg mixture.
7. Bake for 20-25 minutes or until the pastry is golden brown. Let stand for 5 minutes. Serve with crackers or toasted bread slices.
