Adobo Pork Chop With Pineapple
Adobo pork chop with pineapple is another variation of the ever so popular Pork Adobo. In this version of adobo we add a little bit of sweetness by adding pineapple chunks and pineapple syrup to the dish making it more special. Here I used pork chop instead of the regular cut of pork we use in adobo.
It’s a perfect partner with steamed rice and it’s also a great “baon” for school since it taste a lot better the next day, so you won’t worry that it will be spoiled.

Adobo Pork Chop With Pineapple Recipe
Ingredients
4 slices of pork chops ( or any part of pork)
½ cup vinegar
½ cup soy sauce
1 head garlic, crushed
1 can pineapple chunks (drained)
Reserved pineapple syrup
1 bay leaves
1 tsp sugar to taste
Salt and pepper to taste
Cooking oil
Procedure
1. In a bowl combine pork chops, garlic, bay leaves, ground black pepper, soy sauce and pineapple juice. Marinate for 15-20 minutes.
2. Remove or drained pork chops from marinate. Set aside the marinate.
3. Fry pork chops two minutes from each side until brown.
4. Combine pork chops and marinate in a pot or pan. Simmer in medium heat until the pork chops are tender.
5. Pour vinegar. Simmer for 10 minutes.
6. Season with sugar to taste. Add the pineapple chunks. Simmer for two minutes. Serve hot with steamed rice.

Grilled Pork Tenderloin with Pineapple Salsa
Ingredients:
Pork:
• 1 Tbsp paprika
• 1/4 tsp onion powder
• 1/4 tsp garlic powder
• 1/2 tsp curry powder
• 1/2 tsp mustard powder
• 1 tsp course ground black pepper
• 1-1/2 tsp kosher salt
• 1 Tbsp oil
• 2 pork tenderloins, about 1-1/4 lbs each
Salsa:
• 1 pineapple, peeled, cored, and cut into 1/2-thick slices
• Oil, for brushing
• 1 tsp minced ginger
• 1/2 a jalapeño, seeded and minced
• 1/2 cup finely diced red onion
• 2 Tbsp lime juice
• 1 tsp honey
• 1/4 cup olive oil
• 1 Tbsp chopped cilantro
• 1 tsp kosher salt
• 1/2 tsp course ground black pepper
Preparation:
1. Preheat the grill over medium-high heat.
2. To prepare the pork, combine the paprika, onion powder, garlic powder, curry powder, mustard powder, black pepper, salt, and oil in a small bowl until you have a paste. Rub the spice mixture on each side of both pork tenderloins and set aside.
3. To prepare the salsa, brush the pineapple with oil and grill for about 2–3 minutes per side, or until grill marks appear and it's cooked through. Remove the pineapple from the heat and set it aside. When the fruit is cool enough to handle, dice the pineapple and place it in a medium-sized bowl. Add the ginger, jalapeño, red onion, lime juice, honey, olive oil, cilantro, salt, and pepper. Stir together and let the salsa marinate while grilling the pork.
4. To cook the pork, place it on the preheated grill and cook until it reaches an internal temperature of 165°F. When the pork is cooked, place it on a platter, cover it with foil, and let rest for about 10 minutes. Slice and serve with the salsa.
You can make an entire meal on the grill and that’s great news when temperatures are sky high. Now we’ve probably all seared or baked a pork tenderloin. Today, I’m going to grill it and then I’m going to top it with a tangy and delicious pineapple grilled salsa. Don’t forget the USDA now says that you don’t have to cook pork to 160 degrees. The recommended internal temperature now for pork is 145 degrees and don’t be nervous if you cut into it, it’s normal if it’s slightly pink. For more grilling tips, check out my videos on YouTube.
