Recipe - Rigatoni with Beefy Mushroom Gorgonzola Sauce
INGREDIENTS:
●2 tablespoons vegetable oil
●2 teaspoons butter
●1 (1 1/4-inch) thick sirloin or rib-eye steak, cut into 1-inch cubes (about 24 ounces)
●1 1/4 teaspoons salt, divided
●3/4 teaspoon freshly ground black pepper, divided
●1 pound cremini mushrooms , stem ends trimmed and sliced
●1/3 cup minced shallots
●1 1/2 teaspoons minced garlic
●1/2 teaspoon minced fresh rosemary leaves
●1/2 teaspoon minced fresh thyme leaves
●1/2 cup dry white wine
●1 tablespoon all-purpose flour
●1 cup beef broth
●5 to 6 ounces Gorgonzola , crumbled
●2/3 cup heavy cream
●1 pound rigatoni , cooked al dente , drained,
●1/2 cup cooking liquid reserved
●1 tablespoon chopped fresh parsley leaves
●1 tablespoon snipped chives

BEEFY MUSHROOM with GORGONZOLA SAUCE and PASTA
INGREDIENTS:
2 tbs cooking oil
2 tbs butter
20-24 oz sirloin or ribeye steak, cut into cubes
1.5 tsp salt, divided
3/4 tsp black pepper
3/4 lb sliced mushrooms
1/3c sliced shallots
1.5 tsp garlic minced
1/4 tsp rosemary, crushed
1/4 tsp thyme
1/2C dry white wine
1 tbs flour
1c beef broth
5-6 oz Gorgonzola crumbed
2/3c heavy cream
Pasta of choice
1 tbs fresh parsley chopped
1 tsp chives
RECIPE :
In a large skillet, heat oil over high heat, add butter,
Add beef and season with salt and pepper (I cook meat on grill instead)
Add mushrooms, stirring occasionally, cook until soft an browned
Add shallots, garlic, rosemary, thyme, cook for 2 minutes
Add the wine, add the broth, cook and stir for 5 minutes to reduce by half
Add the cheeses and cream to pan, cook until cheese melts and creamy
Add beef to pan
Add pasta, stir to cover
Add chives
Serve

15-minute Cherry Tomato Pasta
1 lb pasta of choice
3-4 garlic cloves, thinly sliced
¼ cup extra virgin olive oil
2 pints cherry tomatoes
6-7 leaves fresh basil, thinly sliced
1 tsp black pepper
Salt to taste
¼ cup fresh parmesan cheese (add more if you like)
Pasta water as needed
Bring a large pot of water to a boil seasoned with salt.
In a large skillet pour the olive oil and add in the thinly sliced garlic.
Turn the heat to medium heat and let the garlic infuse with the oil until golden brown, this should take about 3-4 minutes.
At this point you can cook the pasta when water is at a boil, so it will be ready at the same time as the sauce. Cook the pasta shy 2 minutes of al dente as per package directions.
Add in the whole cherry tomatoes and stir them around until they soften and start to burst. You can use a wooden spoon to help with this until it reaches a saucy consistency, this takes about 7-8 minutes.
Add in fresh basil. Season with pepper and salt.
Drain pasta (but reserve the water) and add it in to the skillet. Pour in about ½ cup of the pasta water and stir.
Keep stirring the pasta around the skillet for about 2 minutes.
Adjust for seasoning and pasta water, and add parmesan cheese as you like.

Ingredients (serves 4):
-320g farfalle pasta
-150ml heavy cream
-350g blue cheese (choose your favourite one! Gorgonzola, blue Stilton...)
-80g chopped walnuts
-2tsp thyme
In a pan over medium low heat, add your heavy cream and blue cheese and let it simmer for 2/3 minutes or until the cheese is completely melted.
Turn the heat off, then add your chopped walnuts and some thyme.
Boil your pasta in some salted water, then add it into your blue cheese sauce along with a couple of spoons of pasta water and stir everything until sexy!

Take your steak to a whole new level!
Who doesn't love a juicy, slightly charred steak, served up with a mountain of chips (or saute potatoes if you're feeling posh) and some nice green veg!
It's one of my favourite weekend dinners, and it's made even better with the addition of one of these delicious sauces (ok, one is a garlic butter, but that works fab too!).
Most of these sauces can be made while your steak is resting, so your steak will be perfectly rested and ready to serve when that sauce is ready.
