This is a MUST TRY Jalapeño Salsa Recipe!!! It is so delicious, by far the best Jalapeño Salsa I've ever had. Everytime my mom makes it, it disappears, so flavorful and spicy!!! Full Recipe-
18 Jalapeños
2 lrg Tomatoes
4 Tomatillos
2 Garlic Cloves
1 1/2 tablespoons of Chicken Bouillon
1/2 teaspoon of salt (to taste)
2 green onions (to taste)
Handful of chopped Cilantro (to taste)
Half Recipe-
9 Jalapeños
1 Lrg Tomato
2 Tomatillos
1 Garlic Clove
1 Tablespoon of Chicken Bouillon
1/2 Teaspoon of Salt (to taste)
1 Green Onion (to taste)

Fire-Roasted New Mexico Green Chile Sauce
Today we take on one of my favorite annual cooking projects and make one of my all time favorite foods: New Mexico Green Chile Sauce. After trying several recipes, I've come to like this one best - it's simplicity let's the flavor of the peppers shine.
Green chile sauce is great on a lot of things. Some of our favorites are eggs, chicken fried steak, enchiladas (of course), pulled pork, and salmon. This isn't like hot sauce where a little goes a long way - pile it on!
Recipe for green chile (not quite half way down the page - New Mexico Green Chile Sauce): Notice how the recipe says 1 cup (or more) chopped green chiles? I exercise that option by using 1.5 cups, then I scale up to the actual amount of peppers I end up with (8 cups, in this case)
Recipe for chicken stock: I actually simmer mine overnight to extract everything I can from the bones
*Note about grilling: the technique I described involving rotating the grate has worked for me in the past, and is excellent for foods that cook very quickly over high heat, like Korean Barbecue, but I decided not to do it this time. Instead, I just loaded up the whole grate, took peppers off as they finished, and then moved all the the peppers to the right toward the hot side to take up the now free space over the hottest part of the grill. I kept working this way until all of the peppers were finished.
Other rambling:
Mass of hot peppers used = 2690 grams
Mass of mild pepper used = 1525g
This was two full produce bags of hots and 1 full produce bag of milds from the store.

In this video we’re making a traditional salsa verde and a salsa roja. Both of these are estilo Monterrey, MX and courtesy of my good friend Ruben “El Borrego” Rios who made these for us during one of our epic bbq classes. Gracias Compadre!
For our salsa verde we’re gonna use seven tomatillos, three green jalapenos, two cloves of garlic, a head of cilantro and 2 tsp APC OG – which is salt pepper and garlic. This is a boiled salsa that is rich in flavor and can be a great base for other recipes like enchiladas suizas or just for topping tacos and your favorite plates.
Now the salsa roja is a little bit different but just as amazing. This recipe calls for seven red jalapeños, five roma tomatoes, two garlic cloves, seven chile de arbol, 2 tsp of APC OG and while blending…2 tablespoons of olive oil. This gives the salsa roja a creamy, smooth texture that is delicious with chips, some loaded ribs or any grilled meats.

Boiled Salsa Verde
6 medium tomatillos
1/2 medium onion
1 jalapeño or Serrano pepper
Fresh cilantro (20 stems)
1 Tbsp lime or lemon juice
1/2 Tbsp salt (Himalayan)
*These amounts yield 1 1/2 cups salsa
Fresh Salsa Verde (2:58)
6 small tomatillos
1/4 medium onion
1 jalapeño or serrano pepper (I used 1/2 serrano)
Fresh cilantro (20 stems)
1/2 Tbsp lime or lemon juice
1 1/2 tsp salt (Himalayan)
*These amounts yield 1 cup salsa
Roasted Salsa Verde (5:22)
6 Tomatillos
1/2 medium onion
5 garlic cloves
1 Jalapeño or serrano pepper
Fresh cilantro (30 Stems)
1 1/2 Tbsp lime or lemon juice
1/2 Tbsp Salt (Himalayan salt)
*These amounts yield 2 cups salsa
Tips
*adjust salt and citrus to taste for all recipes
*salt amounts will vary if you are using regular table salt
*Spice lovers add an extra 1 or 2 peppers to bring the heat ????
*Tomatillos have a lot of pectins, when you refrigerate you’ll notice the salsa gets thicker. Not to worry! Just mix and continue with your salsa : )
