Breakfast? SALSA! You always need salsa no matter what dish or meal you are making so be sure to always have these two ready to go fresh or from the fridge!
There are so many ways to make red and green salsas and I’m gonna share with you my two favorite recipes.
My SALSA VERDE is HOT. Jalapeños, serranos and garlic is all you need and I love this simple green salsa because it can also be a base to kick up the heat in almost any other salsa you make.
My SALSA ROJA is just savory and dang delicious. Chile piquin, chiltepin, garlic and Roma tomatoes is all you need to make this red salsa. This combination uses the official pepper of the State of Texas, combines it with the tomatoes and gives it a great flavor to balance out the heat and also make it good for different dishes.

Today I’m going to be sharing with you how easy it is to make tamales de pollo y rajas , now let me tell you the best tamales are moist, fluffy and full of flavor the chicken has to be juicy and wet with its sauce! After you make your own masa and you make it float you will taste the difference and will never use store bought masa again, seriously making your own tamales is life changing, and I mean yes they are time consuming but you only make tamales at least once a year, why not make the BEST!? use your extra little hands and create memories!

I M P O R T A N T ⚠️
Make sure your masa floats! Making tamales in different temperature does make a difference on how much broth the masa will need to hydrate! When my ac is on, I usually use between 7-8 cups of broth during the colder days it only takes 6 cups of broth. if your masa dont float that means its not fully hydrated so add a little more broth then mix for 2 minutes and test it again until it floats. light and fluffy masa means soft and moist tamales! its very important for the masa to float TRUST ME you can taste the difference. dry tamales are not good!!!! the masa is what will make the tamal perfect!
Tip: if you don’t have a stand mixer you can also use a hand mixer or use your hands but keep in mind you will mix for at least 45 minutes to get the right consistency !
Ingredients: makes 40 tamales
For the chicken, boil 5qs water with 1 onion, 6 garlic cloves (1/2 head) salt I used 1/4 cup, 3 bay leaves and 2 tsp peppercorn
7 lbs chicken breast with rib
9 poblano peppers
5 green hatch peppers
25 tomatillos
jalapenos, I used 3
green chile arbol or serrano peppers
1/2 white onion
4 garlic cloves
1 1/2 tsp black pepper
1 tsp oregano
1/2 tsp whole cumin
chicken bouillon; I used 1 1/2 tbsp
bunch of cilantro
salt to taste
For the masa
6 cups instant corn masa for tamales
1 1/2 cup lard
5 tsp baking powder
4 cups broth
4 cups hot water plus needed

Boiled Salsa Verde
6 medium tomatillos
1/2 medium onion
1 jalapeño or Serrano pepper
Fresh cilantro (20 stems)
1 Tbsp lime or lemon juice
1/2 Tbsp salt (Himalayan)
*These amounts yield 1 1/2 cups salsa
Fresh Salsa Verde (2:58)
6 small tomatillos
1/4 medium onion
1 jalapeño or serrano pepper (I used 1/2 serrano)
Fresh cilantro (20 stems)
1/2 Tbsp lime or lemon juice
1 1/2 tsp salt (Himalayan)
*These amounts yield 1 cup salsa
Roasted Salsa Verde (5:22)
6 Tomatillos
1/2 medium onion
5 garlic cloves
1 Jalapeño or serrano pepper
Fresh cilantro (30 Stems)
1 1/2 Tbsp lime or lemon juice
1/2 Tbsp Salt (Himalayan salt)
*These amounts yield 2 cups salsa
Tips
*adjust salt and citrus to taste for all recipes
*salt amounts will vary if you are using regular table salt
*Spice lovers add an extra 1 or 2 peppers to bring the heat ????
*Tomatillos have a lot of pectins, when you refrigerate you’ll notice the salsa gets thicker. Not to worry! Just mix and continue with your salsa : )

Hatch Chili BBQ Sauce
It's Hatch chili season and I wanted to come up with a new recipe for using them. I think the BBQ sauce is it.
Ingredients:
1 diced onion
2 tbls butter
1 c chopped tomatoes
1/2 c diced roasted Hatch chili's
1/2 c minced celery
1 c catchup
2 tbls brown sugar
1/2 tsp mustard powder
2 c chicken stock
1 tsp salt

Ingredients for green chile enchiladas
Chicken (I used 2 Chicken Breast)
Corn Tortillas
6-8 Poblano Chiles
7-9 Tomatillos
1 Bunch Cilantro (Optional- blend it with the chile and tomatillos )
2 1/2 Cups of Cheese ( I used Oaxaca)
*Mozzarella, Munster, or queso fresco
2 cups Chicken broth ( keep extra if the sauce is too thick)
2 Tablespoons Knorr Chicken Bouillon
1 Cup Heavy Cream (you can use: Milk or Half and Half)
1 Teaspoon butter
1/2 a medium onion (Optional for the filling)
Nutmeg (Optional)
Salt to taste
Garlic (Optional- blend it with the chile and tomatillos)
