Pulled Chicken Tacos
Ingredients:
Chicken Breast
Corn Tortillas
Quesadilla Cheese
Cilantro
Red Onion
Red Bell Pepper
Green Bell Pepper
Olive Oil
Diced Jalapeño Peppers
Diced Tomatoes
Chicken Broth
Creole Seasoning
Adobo
Garlic Powder
Onion Powder
Cayenne Pepper
Parsley
Salt
Smoked Paprika
Red Pepper Flakes
Directions:
1. Slice 1/2 red onion
2. Dice 1/2 red onion
3. Chop up green and red bell peppers
4. Add 1 tbsp of olive oil to veggie mix
5. Season veggies to taste with creole seasoning, adobo seasoning, garlic powder, onion powder, salt, cayenne pepper, smoked paprika, crushed red peppers, and parsley
6. Chop up cilantro
7. Slice 2 chicken breast in half
8. Season chicken breast to taste with creole seasoning, adobo seasoning, garlic powder, onion powder, salt, cayenne pepper, smoked paprika, crushed red peppers, and parsley
9. Add 1 tbsp of olive oil over chicken and mix
10. In a skillet, add 1 tbsp of olive oil
11. Sear chicken for 5 minutes on each side or until fully cooked
12. In the same skillet, sauté veggies for 5 minutes
13. Shred chicken breast
14. In the skillet with the veggies, add 14 oz of diced tomatoes and 2 tsps of diced jalapeños, mix well and allow to simmer for 5 minutes
15. Add shredded chicken breast and 1 cup of chicken broth
16. Season to taste with creole seasoning, adobo seasoning, garlic powder, onion powder, and smoked paprika

17. In a skillet, add 1 tbsp of olive oil
18. Coat tortillas with the sauce from your pulled chicken mix
19. Add tortillas to skillet
20. Once the tortilla begin to rise, add cheese, chicken, diced onions, and cilantro
21. Fold tortilla and remove from skillet
22. Enjoy!

Preparation
Prepare grill.
Combine first 4 ingredients in a small bowl; rub spice mixture over chicken.
Place chicken on grill rack coated with cooking spray; grill 10 minutes on each side or until done. Let stand 5 minutes; chop.
Heat tortillas according to package directions. Divide chicken evenly among tortillas; top each tortilla with 2 tablespoons cabbage and 1 teaspoon cheese. Serve with sour cream, if desired.
