Italian Grandma Makes Chicken Roast with Potatoes
CHICKEN ROAST WITH POTATOES:
1 Whole Chicken, cut into pieces, about 4½ lbs (2Kg)
¼ cup Fresh Parsley, chopped
4 Cloves Fresh Garlic, sliced
Olive Oil
2 Carrots, large chunks
2 Yams (Sweet Potatoes), quartered lengthwise
3 Idaho Potatoes, quartered lengthwise
2 tsp Oregano
1/3 cup Pecorino Romano Cheese, grated
Salt & Pepper to taste
GRANDMA GINA’S TYPICAL SALAD:
Romaine Lettuce
Shaved Carrots
Red Onion
Tomatoes
Cucumbers
Salt
Oregano
Wine Vinegar
Extra Virgin Olive Oil
Salt
(All quantities to taste)

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

5-6 bell peppers medium to large
2 tablespoons olive oil
½ large yellow onion chopped
3 garlic cloves minced
1¼ pounds lean ground beef
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (8-ounce)
1½ cups cooked rice
¼ cup finely chopped fresh parsley plus more to garnish
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon ground black pepper
1½ cups shredded mozzarella cheese
1. Preheat the oven to 350°F.
2. Cut the bell peppers in half remove seeds and ribs but leave the stem from. Stand the peppers up inside a large casserole dish.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, until tender and browning around the edges, about 8 to 10 minutes. Stir in the garlic and cook 2 minutes more.
4. Add ground beef and cook until browned, about 10 minutes, stirring and breaking up any chunks with the back of a spoon while cooking.
Stir in the diced tomatoes, tomato sauce, cooked rice, parsley, Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the mixture is heated through, about 3 minutes. Remove from the heat.
Fold in 1 cup mozzarella cheese.
5. Spoon the filling into the peppers
Sprinkle the filling with the remaining 1/2 cup cheese.
6. Bake for 20 minutes or until the peppers are tender and the cheese is starting to brown. Let cool for about 5 minutes before serving.
Garnish with fresh parsley, if desired.
Serve and enjoy!
Grilled Garlic Bread #shorts
Homemade grilled garlic bread.
I picked everything up from my local @marianosmarket and starting with 4-5 whole garlic heads, cut off the tops and place them on some foil. Add a drizzle of olive oil, salt, pepper and crimp the foil tight.
These go on the @biggreenegg at 400d degrees indirect for about an hour to roast. After these are done, we prep the garlic paste.
Combine 1 stick of butter, squeeze out all that delicious roasted garlic, add 2 tsp salt, 1 tsp crushed red pepper, 1 tbsp olive oil, 1 tsp fresh parm and fresh parsley. Mix everything together and spread over your bread. Put back on the grill for 5-10 minutes, until bread is crispy and the tops are nice and bubbly. Remove, top with more fresh parm, parsley and enjoy!

GARLIC GREEN BEANS⤵️
1 lb green beans
2 TBSP salted butter
1 tsp Garlic powder
1 tsp Salt
Red pepper flakes,
Minced/ grated garlic, as much or as little
1. Wash green beans. Cut the ends off green beans.
2. Melt your butter (only melt half way through)
3. Once butter is 1/2 way melted, add salt, garlic powder & red pepper flakes. Cook until butter is all the way melted and starts to bubble
4. Then add green beans and cook until they become a bright green.
5. Then add grated garlic, cook for 1 minute and then turn off heat
