How To make Grilled Szechuan Chicken Salad
1 lb Chicken Breast,
- boneless, skinned 1/4 ts Seasoned Pepper, to taste
1 cn Pineapple, sliced,drained
-Pineapple juice, reserved Lettuce leaves Red onion, sliced Red Bell Pepper
SALAD DRESSING:
3 tb Oil, vegetable
2 tb Hot Soy Sauce, CHUN KING
2 tb Pineapple juice, from reserv
1 tb Whoite vinegar
1 tb Honey
1/4 ts Ginger, ground
Lightly sprinkle both sides of boneless, skinned, chicken breasts with seasoned pepper. Grill; slice into strips. Reserve 2 tablespoons juice from can of pineapple slices. Prepare Salad Dressing (directions follows). Brush pineapple slices with some Salad Dressing, grill 2-3 minutes. Arrange chicken and pineapple over lettuce and vegetables. Top with Salad Dressing. SALAD DRESSING: In a covered jar, combine oil, hot soy sauce, 2 tb pineapple juice, white vinegar, honey and ground ginger. Shake well.

Sichuan Spicy Chicken Salad (Chinese Style Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
You can buy chilli oil from shops, but I prefer homemade. Just follow stage 4 to 6.
Serves 4
Ingredients:
400g Chicken
2 Tsp Chilli Powder
2 Tsp Oil
2 Spring Onions
6 - 8 Cloves Garlic
2 Tbsp Light Soy Sauce
2 Tsp Caster Sugar
50g Bunch Coriander
Salt to Taste
Method:
1. Finely chop garlic, coriander and thinly slice spring onions.
2. Boil chicken breast for 45 minutes (whole chicken for 1½ - 2 hours) until cooked.
3. Remove from water and leave to cool.
4. Meanwhile, heat oil in the wok until smoking hot.
5. Then remove from heat to cool down for 1 minute.
6. Place the chilli powder in the hot oil and stir ensure the oil is not too hot otherwise the chilli powder will burn.
7. Break the chicken into small pieces (pull the meat off the bone if using a whole chicken).
8. Add the chopped garlic, coriander and sliced spring onions, also add the caster sugar and salt.
9. Add the soy sauce, chilli oil and mix well.
10. Place on a dish and serve.
Tip
Try it before serving.
If you like it sweeter, add more sugar; if you like it salty, then more soy sauce. If you love it hot, use more chilli oil, and some chopped green chilli.

This is a unique shredded chicken salad recipe. Chinese people don’t normally eat salad that much, but this Chinese salad from Szechuan province tastes so good. And it is very easy to make. Give it a try, you will like it too.

**INGREDIENTS FOR SHREDDED CHICKEN SALAD:**
- 3 chicken thigh (or 200 grams of chicken breast) [3个鸡腿或者200克鸡胸肉]
- 1 cup of shredded carrot [1杯胡萝卜丝]
- 1 cup of shredded cucumber [1杯青瓜丝]
- 1/4 cup of cilantro [1/4杯香菜]
- Some jasmine flower [一小撮茉莉花] [Amazon Link:
**FOR MAKING THE SALAD DRESSING**
- 2 or 3 tbsp of jasmine tea or water [2-3汤匙茉莉花茶或者水]
- 1 tbsp of minced garlic [1汤匙大蒜碎]
- 1/2 tbsp of minced ginger [1/2汤匙姜蓉]
- 1 tbsp of dou ban jiang [1汤匙豆瓣酱]
[Recommend buying choice:
- 2 tsp of Chinese black vinegar [2茶匙陈醋]
- 2 tsp of sesame oil [2茶匙芝麻油]
- 1 tsp of sesame seeds (optional) [1茶匙芝麻]
**HOW TO MAKE THE SHREDDED CHICKEN SALAD**
- Boil the chicken thighs until it cooks through. It will take about 8 minutes. Chicken breast will work as well.
- Let it cool down to room temperature and rip it into strips. Once you are done, transfer that into a large bowl.
- Add a bunch of shredded cucumber, shredded carrot and a hand full cilantro.
- Set it aside. Let’s make the sauce.
- Pour in about 2-3 tbsp jasmine tea or water into the sauce bowl.
- Add in 1 tbsp of minced garlic, 1/2 tbsp of minced ginger.
(This amount of garlic and Ginger is really intense if you don’t like it that much you can adjust it.)
- Next ingredients are the soul of Sichuan - 1 tbsp of dou ban jiang.
(I really don’t know the good substitution of this because dou ban Jiang flavor is really unique. But if you can’t find it, you can try to use your favorite chili sauce. I am sure it will taste good but won’t be the same flavor.)
- Besides that, We gonna add 2 tsp of Chinese black vinegar.
- Drizzle in 2 tsp of sesame oil. Give it a mix. Taste it and see if you need more salt. If it is too salty, add more jasmine tea in it.
- Pour the sauce into the big bowl. Toss them together make sure everything is coated with that delicious dressing. If you like to finish it with some sesame seed on the top, that’s awesome
- And that’s pretty much it. You are ready to serve.

1. Cook chicken legs in water with ginger, scallion and Chinese cooking wine for 15 min. Cool down in ice water for 5 min and then tear into pieces.

One of my favourite restaurants here in Canada is Cactus Club Cafe. And I kid you not, I order their spicy chicken lettuce wraps every time that I go there. Whether it's to share with my friends as an appetizer or to devour as my main course. This dish is always on the bill. So, I was inspired to recreate this favourite at home.
