How To make Hawaiian Roast Pork
1 Pork shoulder roast (3 lb)
[boneless] {Boston Butt} 1/2 c KIKKOMAN soy sauce
1 1/2 ts Liquid smoke seasoning
*Precool your refrigerator... 1) Cut pork roast in half length wise and place the halves in a large plastic bag... 2) Combine the soy sauce and the liquid smoke and add to the pork in the plastic bag... Press out the air, tie the top securely, and turn over several times to coat pieces well... Refrigerate for 8 hrs. or over night, turnig occasionally... *Preheat ove to 350? 3) Remove pork from the marinade and place in a shallow baking dish, cover with aluminum foil and, bake for 30 min, 4) Discard the foil, turn the meat and bake for one hour more, or until a meat thermometer (inserted into the thickest part) registers at 170? 5) Cut across the grain into thin slices and serve...

How to Make Kalua Pork & Hawaiian Rice | Gourmet Guru Kamado Grill
In this video, I’ll show you How to make Kalua Pork and Hawaiian Rice. Kalua Pork is a traditional Hawaiian cooking technique where an entire pig is cooked in in an “underground oven” and the primary seasoning is Alaea sea salt. A hole is dug in the ground, a fire is started using Hawaiian mesquite wood and then the pig is covered in banana leaves and the covered. It is quite common to eat Kalua pork at a luau. We are not digging a pit, but will make this tasty dish using our Gourmet Guru Kamado grill as a smoker. You can eaily make this on the Big Green Egg or other smoker.
Ingredients Kalua Pork
• 6.5 lb pork butt
• 3.5 tablespoons Alaea sea salt
• 2-3 Banana leaves
Ingredients Hawaiian Rice
• 2 cups cooked rice
• 1.5 tablespoons chopped cilantro
• 1 1/4 cup diced pineapple
• 1.5 tablespoon Ponzu sauce
• ½ teaspoon minced garlic
• 1 chopped green onion
• 1/8 teaspoon red pepper flakes
• Juice from ½ lime
• ½ teaspoon soy sauce
Procedure Kalua Pork
1. Using a sharp knife, make slices in a cross-hatch pattern on the pork butt about ¼” deep.
2. Rub the sea salt over the pork butt including down in the slits that you cut.
3. Wrap the pork butt in banana leaves and secure with butcher’s twine.
4. Heat the smoker to 250 degrees F, add some mesquite wood and place the pork butt on the smoker.
5. Cook for 2 hours.
6. Remove the pork butt from the smoker and wrap tightly in aluminum foil.
7. Place the pork butt back on the smoker and cook until it reaches an internal temperature of 201 to 203 degrees F. This took 5 hours today.
8. To prepare the rice, mix all ingredients in a pan over medium heat. Simmer for 5 – 7 minutes to remove the moisture from the pineapple.
9. Remove the pork butt from the grill. You can let rest for 20 minutes and serve or wrap in a towel, place in a cooler and serve a few hours later.

• 3 to 5 pound pork shoulder or butt roast
• 2 tablespoons vegetable oil
• 2 teaspoons salt

1️⃣ Preheat oven to 450 degrees.
2️⃣ 00:00:17 - Rub oil onto pork roast. In a small bowl, stir together salt, pepper, garlic powder, onion powder, and paprika. Sprinkle seasoning mixture onto pork roast. Place fatty side up in a roasting pan or large cast iron dutch oven.
3️⃣ 00:01:37 - Roast, uncovered, in the 450 degree oven for 30 minutes. Reduce the oven temperature to 350 degrees and continue cooking an additional 1 hour.
4️⃣ 00:02:40 - Remove roast from oven and place the onion chunks, carrots, and potatoes around the meat. Pour apple juice on vegetables. Season vegetables with salt and pepper. Place rosemary sprig on top.
5️⃣ 00:03:11 - Cook an additional 1 to 1 1/2 hours, or until vegetables are tender and meat shreds easily with a fork. Season vegetables with additional salt and pepper to taste and serve hot.

Hawaiian Imu (cooking a pig in the ground)
an Imu is an underground pit, in which a pig is cooked, Hawaiian style. We used knives to shave the hair, but shown is the use of a lava rock that old Hawaiians used. This pig was quartered so as to shorten the cooking time. The footage was shot with a friend's camera, so it is not in 4K.
