Recipe - Cod Roasted Under a Herb Crust
Ingredients
4 x 175ml Filted Cod
Herb Crust
- Salt and Pepper, season to taste
- 80g Breadcrumbs
- 40g Grated Gruyere or medium cheddar
- 25g Chopped Parsely
- 10g Chopped Chive
- 60g Butter
Spiced Tomato Sauce
- 8 Large Tomatoes skinned & seeded or 250g tin chopped tomatoes
- 100ml Olive Oil
- 1 Shallot
- 1 Clove Garlic
- 1 Sprig Thyme
- 1/2 Bayleaf
- 1/2 Seeded red chilli pepper
- 500g Baby Spinach
Cooking Instructions
Preheat oven to 200 degrees centigrade / 400 degrees fahrenheit / Gas mark 6
Spiced Tomato Sauce
- Heat the oil in a pan and sweat the shallot and garlic on a slow heat without colour. Add the tomatoes, bayleaf, thyme, chilli and cook down slowly. Blitz with a hand blender and pass through a fine strainer and keep warm.
Herb Crust
- Place all ingredients in a blender until smooth
Cod
- Place the 4 cod fillets on a greaseproofed baking tray. Pat out the prepared crust in your hand and place on the cod. Place on the top shelf of the oven for approximately 10mins
- Meanwhile take the spinach and wash it. Thoroughly heat a wok or pan and add some seasoned melted butter. Add the spinach and toss for just 1 minute. Drain and place on the plates, place the cod on top and drizzle the spiced tomato around.
- All washed down suitably with a cooled glass of New Zealand Sauvingnon Blanc
Tips
- Remember when handling chilli peppers, wash your hands thoroughly after preparing them. Do not rub your eyes or lips to aviod any uneccessary pain or discomfort
- Herb crust can be frozen between 2 sheets of greaseproof. Roll thin, freeze and cut and use as required.

Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Panko-Crusted Salmon

Ingredients
2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving
Directions
Preheat the oven to 425 degrees.
In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

Herb Crusted Fish Fillet is a signature Gordon Ramsay recipe. This dish features perfectly cooked fish fillets with a crispy, herbaceous crust. The crust is a blend of fresh basil and parsley combined with finely grated Parmesan cheese, breadcrumbs, and a hint of balsamic vinegar, creating a burst of flavors that complements the fish beautifully. Cherry tomatoes add a pop of color and freshness to the dish.
Ingredients:
2 fish fillets
3.5 oz cherry tomatoes
Half of an onion, peeled and chopped
0.18 oz fresh basil
Half a cup of bread
1/2 oz fresh parsley, chopped finely
1.0 oz finely grated Parmesan cheese
1 tbsp of balsamic vinegar
Salt, to taste
Pepper, to taste
Directions:
00:02 Prepare herb-crusted fillets of Cornish brill, season with salt and pepper, and sear in olive oil.
00:17 Sear the fish for one minute on each side, then remove to a tray.
00:38 Make a salsa with roasting tomatoes flavored with the fish pan juices.
00:56 Create a crust mixture with bread, parsley, and parmesan, which helps bind the crust and adds color.
01:14 Generously pack the breadcrumb mixture on the fish and bake for six minutes.
01:30 Serve the herb-crusted fillets with the tomato salsa, finishing with olive oil and balsamic vinegar.
