1/2 ts Cinnamon
1 3/4 c Toasted almonds; ground
1 c Pumpkin pie mix
Divided 1/3 c Amaretto
1/2 c Powdered sugar
In medium bowl, blend vanilla crumbs, 1 cup ground almonds, powdered sugar and cinnamon. Stir in pumpkin and amaretto. Form into 1" balls. Roll in remaining 3/4 cup ground almonds. Refrigerate. -----

INGREDIENTS FOR ALMOND COOKIES:
►16 Tbsp (1/2 lb) unsalted butter, softened
►½ cup (62 grams) powdered sugar, plus more for rolling cookies
►1 tsp vanilla extract
►2 cups (250 grams) all-purpose flour *measured correctly
►½ tsp salt (we used fine sea salt)
►1 cup (100 grams) almond finely ground meal or almond flour
►½ Tbsp orange zest from 1 medium orange

These melt-in-your-mouth almond cookies are thick, soft, and chewy cookies that are naturally grain free and refined sugar free! The most amazingly delicious, healthy treat of all times! This cookie recipe is 100% vegan, low-carb, absolutely delicious which is perfect for snacking. This is a quick and easy one bowl cookie recipe which doesn't need any special tools to mix. These Almond flour cookies are super tasty on their own, however to make them extra special for the holidays, I decorated them with melted white chocolate chips as well as semi-sweet chocolate chips. Since it is a healthy, refined sugar free recipe, I avoided royal icing for decoration.

Makes 22 cookies
Ingredients:
2¼ cups (220g) almond flour (ground almonds)
1 cup + 2 Tbsp. (140g) Powdered sugar
3/4 teaspoon Baking powder
1/4 teaspoon Salt
2 Egg whites
1 teaspoon Vanilla extract
1 teaspoon Rose water (optional)
1 teaspoon Almond extract (optional)
Lemon zest from one lemon
1 teaspoon Lemon juice
For decoration:
Raw almonds
Directions:
1. Preheat oven to 350F (175C).
2. In a large bowl combine almond flour, powdered sugar, baking powder, lemon zest and salt.
3. In a separate bowl beat egg white until foamy.
4. Add beaten egg white, vanilla extract, rose water, almond extract, lemon juice to the flour mixture and stir until combined.
5. Shape the dough into small balls and place on a baking tray lined with parchment paper. Decorate each cookie with an almond (optional).
6. Bake for 15-18 minutes or until lightly golden (the cookies shouldn’t be too golden, otherwise they will dry out). Allow to cool before serving.

Gluten-free Greek Christmas Cookies (Almond & Cherry Amygdalota)

Ingredients
2 egg whites
1/4 teaspoon salt
3/4 cup (170g) granulated sugar
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
2 and 1/2 cups (250g) blanched almond flour
14-16 Maraschino cherries, drained
confectioner's sugar
1/4 cup or more of sliced almonds
Instructions
Preheat the oven to 350 °F, 180 °C. Line a baking tray with parchment paper.
Beat the egg whites with the salt on high speed until frothy. Add the sugar and beat until thick and shiny.
Add the vanilla and almond extract along with the almond flour and beat until a dough has formed.
Place about a cup of confectioner's sugar in a bowl.
Take about a tablespoon (35-40g) of dough and form it into a ball. Roll the ball in the confectioner's sugar.
Place the balls onto the prepared pan.
Press the center of each ball down with your index finger to create a little well to hold the cherry.
Pat the cherries dry and place one cherry into the center of each ball.
Nestle a few sliced almonds around the cherries.
Bake on the center rack of the preheated oven for 15-18 minutes.
Allow the cookies to cool completelt. Transfer them to a serving platter and serve with coffee. Kali Orexi!
