Unlike the traditional plum cake mixing and soaking in alcohol for 7-8 weeks, this is an instant cake mixing and that too non alcoholic. Mixed dry fruits can be used for immediate baking. Follow my recipe and you get a more or less similar aroma and flavor of a traditional plum cake once baked.

Ingredients:
Sponge Cake:
- 1 and 3/4 cups (210g) flour
- 2 tsp (8g) baking powder
- 1/2 tsp (3g) salt
- 6 large eggs (6 whites, 3 yolks)
- 1.5 tbsp (19.5g) vanilla extract/essence
- 1/2 cup (120g) whole milk
- 1 and 1/4 cups (260g) sugar (1/2 cup (104g) in egg whites and 3/4 cup (156g) in egg yolks).
- 1/2 tsp (2.4g) lemon juice
Milk Mixture (for soaking):
- 1 and 3/4 cups (441g) evaporated milk
- 1 cup (306g) condensed milk
- 3/4 cup (180g) heavy cream
Mascarpone Whipped Cream:
- 1.5 cups (358g) cold heavy whipping cream
- 1/2 cup (50g) of icing/powdered sugar
- 1 tsp (5g) vanilla extract/essence
- 1 cup (225g) cold mascarpone cheese
Topping:
- Ground cinnamon to taste
- Fruit of choice (I used strawberries)
NOTE: I used a 12 x 8 inch rectangular cake pan in this video :)

Easy fruit cake| Boiled fruit cake recipe
Ingredients:
Batter:
All purpose flour ( Maida) - 2 cups ( 260 g)
Unsalted Butter- 185 g
Brown sugar -1 cup tightly packed (210g)
Eggs-3 ( medium) At room temperature
Baking powder-1 teaspoon
Baking soda-1/4 teaspoon
Salt-1/4 teaspoon
Zest of 1 orange
Zest of 1 Lemon
Vanilla essence-1 teaspoon ( optional)
Water-1/2 cup
Orange juice-1/2 cup + extra 1/4 cup for brushing
Dry fruits & Nuts:
Raisins-200 g ( 1 cup)
dried cranberries - 100 g
Tutti fruiti-100 g
Walnuts ( chopped) - 50 g
Almonds ( chopped) - 50 g
glazed cherries-100g
crystallized ginger-1 teaspoon ( optional)
You can use the nuts and fruits as per your choice and availability.
Spices:
Cinnamon stick-2 or 3 sticks
Cloves-6-7
Cardamom-6-7
Nutmeg-1/2 of a small one
Sugar-1 tablespoon
You can adjust the quantities as per your taste
Baking Pan:
8 or 9 inch pan . Grease with butter and line with parchment paper. Since this cake needs a long time baking , lining the sides with baking paper is highly recommended. I used 2 sheets for the bottom for preventing the over browning.
Baking Time:
Preheat the oven at 160C for 10 minutes. Bake at 160C for 45 minutes. After that reduce the heat to 150C and bake for 35-40 minutes more. Oven temperature may vary, so check your cake after 60 minutes of baking.
