Healthy Pumpkin Muffins
These are the best Healthy Pumpkin Muffins EVER! They are light, fluffy, and FULL of delicious pumpkin flavor! Made with coconut oil and coconut milk, these Pumpkin Muffins are also dairy free!
Pumpkin Muffin Recipe:
2 1/4 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon fresh nutmeg
1/2 tsp ground ginger
1 cup coconut milk
1 cup pumpkin
1 egg
1/2 cup coconut oil
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
INSTRUCTIONS
Preheat oven to 400. Line a 12 cup muffin tin with liners or grease well with oil.
Sift together flour, salt, baking soda, baking powder, nutmeg, cinnamon, and ginger over a large mixing bowl.
In a separate bowl, mix together coconut milk, pumpkin, coconut oil, egg, honey, and vanilla extract.
Add we ingredients to dry ingredients and fold together gently, until just combined. Do not over mix.
Measure about 1/4 cup into each muffin cup.
Bake for 15 minutes.

In Fall season, there is nothing sweet and tasty than having pumpkin muffin made of fresh pumpkin.
These fresh homemade muffins are made with fresh healthy ingredients, No sugar or vegetable oil. I used fresh unsalted butter, raw honey, whole wheat flour and fresh spices.
They are so easy to make and they are very delicious, sweet, soft and with great aroma.
Ingredients:
1 1/2 c (one cup and half) whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon nutmeg
1/2 cup chopped pecans
1/2 cup raisins
2 eggs
1/4 cup of raw honey
1/2 cup of warm whole milk
1/2 cup melted unsalted fresh butter
1 teaspoon vanilla extract
1 cup of fresh pumpkin puree
