The recipe -
Serves 4
1-2 lb boneless leg of lamb, cut into 1 inch pieces
1/4 cup vegetable oil
4 large carrots, peeled and cut into 1 inch chunks
2 large onions, peeled, halved and sliced
3 large parsnips, peeled and cut into 1 inch chunks
1 rutabaga (swede) peeled and cut into cubes
2 sprigs fresh thyme
2 cups (about 10) small gold potatoes, cut in half
2 quarts lamb broth (or chicken or beef broth)
salt and pepper to taste
1/4 cup fresh chopped parsley
Add the oil to a large pot and heat until smoking. Carefully add the lamb and stir until brown. (drain off the fat - optional)
Add the vegetables and stir (don't add the potatoes until half way through cooking)
Add the thyme and broth, cover with a lid and simmer for 1 hour or until the meat is tender. Season with salt and pepper and serve.
Garnish with the chopped parsley.

INGREDIENTS:
2 tbsp Olive oil
2lb / 900g beef
Season with salt and black pepper
2 garlic cloves
2 onions
6 oz / 170g bacon
2 carrots
2 celery stalks
3 tbsp flour
14.9 oz / 440ml Guinness Beer
3 tbsp tomato paste
3 cups / 750 ml broth
2 bay leaves
1 tsp thyme

INSTRUCTIONS:
1. Start by cutting the beef into big chunks, approximatelly 4-5cm.
2. Heat oil in a heavy-bottomed pot (cast iron dutch oven) over high heat. Add the beef in batches and brown it well on all sides. Sprinkle salt and pepper over the beef. Once browned, transfer the beef onto a plate and repeat with the remaining batch of beef.
3. Lower the heat to medium. Cook the garlic and onion for about 2 minutes until they start to soften. Then, add the bacon and continue cooking until the bacon is browned.
4. Stir in the carrot and celery, and cook for a few more minutes.
5. Add the flour to the pot and stir for 1 minute to cook off the flour.
6. Pour in the Guinness, broth and tomato paste. Mix well to ensure the flour dissolves completely. Add the bay leaves and thyme.
7. Return the beef and any accumulated juices back into the pot. The liquid level should just cover the ingredients.
8. Cover the pot and lower the heat to a gentle simmer. Let it cook for 2 hours until the beef is tender. Then, remove the lid and simmer for an additional 45 minutes, or until the beef easily falls apart and the sauce has reduced and thickened slightly.
Serve the beef and Guinness stew with pasta, mashed potatoes or whatever you like. Enjoy!

Tarhonya leves or in english egg barley soup
Ingredients:
20 dkg egg barley
6 potatoes
3 medium carrots
1 medium turnip
1 small piece of celery
1 small kohlrabi
8 dkg smoked bacon
2 small red onions
3 cloves of garlic
3 teaspoons paprika
salt to taste
1 teaspoon seasoning pepper to taste
1 tsp thyme
1 teaspoon of turmeric
1 teaspoon cumin
5 tablespoons of sunflower oil
3 l water (to taste)
Dice the smoked bacon and fry in the fat.
Add the finely chopped onion to the side. In another pot, fry the tarragon in oil until light, stirring constantly.
When the bacon and onion are browned, add the spice red pepper and quickly pour as much water as you want the soup.
Maybe we can add tomato juice.
Add the chopped vegetables, garlic, spices and seasoning.
After 10 minutes, stir in the tarragon and the diced potatoes. 30-40 minutes of cooking, then you can serve.

3 teáskanál fűszerpaprika
só ízlés szerint
1 teáskanál ételízesítő
bors ízlés szerint
1 kk kakukkfű
1 teáskanál kurkuma
1 teáskanál kömény
5 ek napraforgó olaj
3 l víz (ízlés szerint)
A füstölt szalonnát felkockázzuk, és zsírjára sütjük. Mellédobjuk a szintén apróra vágott hagymát.
Egy másik edényben olajon megpirítjuk a tarhonyát, szép világosra, állandóan kevergetve.
Ha a szalonna és hagyma megpirult, hozzáadjuk a fűszer pirospaprikát, és gyorsan felöntjük annyi vízzel, amennyi levest szeretnénk. Esetleg paradicsomlevet önthetünk hozzá.
Hozzáadjuk az apróra vágott zöldségeket, a fokhagymát, a fűszereket, az ételízesítőt. 10 perc elteltével a tarhonyát, és a kockára vágott krumplit is belekeverjük.
30-40 perc főzés, majd tálalhatjuk. Jó étvágyat!

Hungarian Mushroom Soup Recipe - Chef Tips
This Hungarian Mushroom Soup recipe is inspired by a dish I enjoyed at Old Wives Tale in Portland, way back in 2008. Print the recipe!
I've put my own spin on it, of course, complete with garlic-shallot puree and a gremolata topping. I think this is way better than most cream of mushroom soup recipes, and I hope you'll agree!
Hungarian Mushroom Soup
1 1/2 pounds button mushrooms, sliced
2 tablespoons butter
2 cups diced white onion
1 teaspoon garlic-shallot puree or 1 minced cloves garlic
1 teaspoon kosher salt
2-3 teaspoons dried dill or 3 teaspoons fresh dill
1 tablespoon of Hungarian Paprika
2 teaspoons fresh lemon juice
3 tablespoons all purpose flour.
2 cups chicken broth, mushroom stock or vegetable broth
1 cup heavy cream or milk
1/2 cup sour cream
Fresh cracked pepper to taste
Garnish:
Zest of 1 lemon
Small bunch of Italian parsley.
Heat a large stock pot over medium heat. Add 2 tablespoons butter. Melt down. Stir in 2 cups diced white onion. Cook down for about 5 minutes. After a few minutes, add 1 teaspoon garlic-shallot puree or 1 minced cloves garlic. Stir well.
After 5 minutes, add the sliced mushrooms. Next, add 1 teaspoon kosher salt followed by 2-3 teaspoons dried dill or 3 teaspoons fresh dill. Next, add 1 tablespoon of Hungarian Paprika. Cook down 10-15 minutes. Add 2 teaspoons fresh lemon juice and 3 tablespoons all purpose flour. Cook down and stir for about 5 minutes.
Finally, add 2 cups chicken broth, mushroom stock or vegetable broth.
Stir, reduce heat to medium/low. Cover and cook for about 10 more minutes.
Next, stir in 1 cup heavy cream or milk. Finally, stir in 1/2 cup sour cream and add fresh cracked pepper and more salt if needed.
Serve with garnish of lemon zest and chopped parsley. Enjoy!
