Servings: 1 6 c Apples; tart,sliced & pared
1 1/4 ts Cinnamon; ground
1/4 ts Nutmeg; ground
3/4 c Milk
2 tb Margarine or butter;softened
2 Eggs
1 c Sugar
1/2 c Bisquick or baking mix
StrEUSEL:
1 c Bisquick or baking mix
1/2 c Nuts; chopped
1/3 c Brown sugar; packed
3 tb Margarine or butter; firm
Preheat oven to 325F. Grease pie plate, 10"x1 1/2". Mix apples and spices; turn into plate. Beat remaining ingredients except for Streusel till smooth; 15 seconds in blender or 1 minute with hand beater. Pour into plate. Sprinkle with Streusel. Bake till knife inserted in centre comes out clean, 55-65 minutes; cool. StrEUSEL: Mix 1 cup Bisquick, 1/2 cup chopped nuts, 1/3 cup packed brown sugar and 3 Tbsp firm margarine or butter till crumbly. -----

This easy to make and delicious apple pie recipe has a flakey butter crust and tender apple filling that’s bursting with flavor and perfectly sweet! Instead of adding lots of flour or cornstarch to thicken the filling I cook the juices down into an apple caramel, which holds all those apple pieced together and really amps up the flavor and makes a tasty pie!

French Apple Pie (a Bisquick recipe)
This is an okay recipe. I prefer my regular apple pie with streusel topping I found this one taste too much like eggs.
Filling
3 cups sliced peeled apples (3 large)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup Original Bisquick® mix
1/2 cup granulated sugar
1/2 cup milk
1 tablespoon butter or margarine, softened
2 eggs
Streusel
1/2 cup Original Bisquick® mix
1/4 cup chopped nuts
1/4 cup packed brown sugar
2 tablespoons firm butter or margarine
1. Heat oven to 325ºF. Grease 9-inch glass pie plate. In medium bowl, mix apples, cinnamon and nutmeg; place in pie plate.
2. In medium bowl, stir remaining filling ingredients until well blended. Pour over apple mixture in pie plate. In small bowl, mix all streusel ingredients until crumbly; sprinkle over filling.
3. Bake 40 to 45 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Store in refrigerator.
Original Bisquick Baking Mix Copycat (feel free to halve the recipe)
6 cups all purpose flour
3 Tablespoons baking powder
2 Tablespoons powdered sugar
1-1/2 teaspoons table salt
3/4 teaspoon baking soda
1/2 cup plus 1 Tablespoon canola oil
Whisk dry ingredients together. Mix well.
Using an electric mixer, slowly stir in
canola oil. Mix until all lumps are gone
and mixture is a uniform texture - about
1 minute.
Store in an airtight container.
Use as an exact substitute for Bisquick
in recipes. Original Bisquick does not
contain powdered milk. Neither does this
copycat recipe.

Make Impossible Apple Pie (Gluten Free option) with Ellen
Ellen, our Director at Mercer County Library System, shows you how to make Impossible Apple Pie, which can be made with either regular or gluten free flour.
Here is the recipe:
Pre-heat oven to 350 degrees.
Peel and slice 3 to 4 apples, any variety. Place them in the bottom of a pie dish so they do not overlap. Sprinkle 1 TBS of cinnamon over apples. Sprinkle 1 TBS sugar over apples.
Melt 1 and 1/2 sticks of salted butter in medium sauce pan. Turn off heat. Add 1/4 tsp of salt. Add 1 cup of sugar. Stir until blended. Add one egg. Stir. Add 1 cup flour, stir. Add 1/2 cup walnut pieces.
Cook for approximately 45 to 50 min. Uncovered. Makes a cake like pie.
