How To make Insalata Di Fava (Fava Bean Salad)
8 oz Dried fava beans, soaked
1 ea Onion, quartered
1 1/4 ts Salt
2 ts Lemon juice
2 tb Olive oil
1 1/2 tb Parsley
1/2 ts Salt
Pepper 1 ea Garlic clove, minced
Drain the beans & slip them out of their skins. Set the skinned beans in a pot with the onion & just enough water to cover. Turn the heat to medium, bring to a boil, add salt & reduce to a simmer. Cover & cook until the water has almost evaporated & the beans are tender & pulpy, 20 to 25 minutes. Drain the beans. Mix together the lemon juice, olive oil, parsley, salt & pepper. Toss with the garlic & the cooked beans. Serve as part of an antipasto plate or as we would serve a potato salad.

Easy Meal Ideas for Weekend: 4 Delicious Recipes TRY TODAY | Kisir, Potato Salad, Fava, Dry Kofte
Today I would like to give you 4 different recipes that we have prepared for ourselves when we were outside for our annual plan with the team. They are very easy to do, delicious, healty and vegan except KURU KÖFTE. You can prepare this meal for a picnic or any other small gatherings with family and friends. The good thing to know about these four dishes is that even if they are not eaten on the same day they are cooked, they are still tasty for a week or so. The first recipe is everyone’s favourite, POTATO SALAD with a Refika touch, which is made with red cabbage and mustard sauce. The second recipe is a delicious meze, FAVA, which is made of fava beans (broad beans) and looks like a pudding. It is the true rival of an avocado beacuse of the feeling of its texture when you’re eating. The third recipe is KISIR, which is made of bulgur and pomegranate. It is an innocent carbonhydrate because of low glysemic index, which means it doesn’t let your blood sugar level fluctuate. The last and only non-vegan one is KURU KÖFTE, which can be served hot or cold so you can store it in the refrigrator and eat whenever you want. You can find details of these recipes in the video.

Fava bean and chickpea salad
Packed with flavors, this fava beans and chickpea salad is a delicious Middle Eastern salad that will leave you satisfied for hours. It's a protein and fiber-rich salad that can be prepared in just 10 minutes. This fava bean salad is vegan and gluten-free.
Full recipe-
Ingredients
2 cups cooked fava beans, around 250 grams of strained canned beans
2 cups cooked chickpeas, around 250 grams of strained canned beans
1 medium red onion, finely chopped
1 medium tomato, finely chopped
2 cloves of garlic, minced
2 tablespoons lemon juice, adjust to taste
½ cup roughly chopped parsley
10-12 fresh mint leaves
1 tablespoon za'atar
1 teaspoon cumin powder
½ teaspoon red pepper flakes
Ground black pepper to taste
Salt to taste
¼ cup extra virgin olive oil
BROAD BEAN SALAD RECIPE
We share one of our favourite summer salad recipes, made with broad beans, mozzarella, rocket and mint picked from Esther's garden. So easy and delicious, and the kids will love to help pod the beans so it's a great way to get the little ones involved. We hope you enjoy!

Ful Salad - A flavorful, tangy and fresh Fava bean salad
Ingredients:
1. 1 (16 oz) can premium Fava beans, drained
2. 2 tbsp. olive oil
3. 4 chives or 2 green onions, chopped
4. 2 tbsp. freshly squeezed lemon juice
5. 1 tsp salt
6. 1 Jalapeño, seeded and diced
7. 2 garlic cloves, minced
8. 2 medium tomatoes, chopped into small cubes
9. 1 bunch parsley, large stems removed and chopped
Directions:
1. Start by washing all vegetables.
2. Chop chives or onions finely and dice tomatoes.
3. Remove large stem from parsley and chop finely.
4. Seed Jalapeño and dice.
5. Add all vegetables to a large mixing bowl, add garlic, salt, olive oil and lemon juice.
6. Drain Fava beans, discarding all liquid and add to the bowl.
7. Mix well until all ingredients are well incorporated.
