????????Los Cinnamon Rolls o Rollos de Canela, son una deliciosa receta originaria de Suecia, y consiste en una masa dulce súper suave que se rellena con una mezcla de azúcar y canela, y luego se cubre con una riquísima crema por encima que hace que no te puedas comer sólo uno. INGREDIENTES:
Rinde 12 Rollos tamaño regular
MASA:
1 Taza (240ml) Leche (calentada a 100˚F) más caliente que tibia
4 Cdas. (57g) Mantequilla sin sal a temperatura ambiente
⅓ Taza (67g) Azúcar
1 Cdta. (5g) Sal
2 Huevos grandes (115g) a temperatura ambiente
3 ⅓ Tazas (420g) Harina para pan, o de fuerza
2 ½ Cdtas. (12g) Levadura Instantánea
PARA ENGRASAR EL(LOS) MOLDE(S):
4 Cdas (57g) Mantequilla sin sal
RELLENO:
1 Taza compacta (220g) Azúcar Morena
2 ½ Cdas. (37g) Canela en polvo
4 Cdas. (57g) Mantequilla sin sal derretida
FROSTING/GLASEADO:
84g Queso Crema (1 caja de 3oz), suavizado
4 Cdas. (57g) Mantequilla sin sal, suavizada
1 ½ Tazas (180g) Azúcar Glass/Pastelera/Pulverizada
½ Cdta. (3ml) Vainilla
⅛ Cdta. Sal
2 Cdas. (30ml) Leche

Makes 12 Regular Size Rolls
DOUGH:
1 Cup (240ml) Milk (heated to 100˚F) warmer than lukewarm
4 Tbsp. (57g) Unsalted butter at room temperature
⅓ Cup (67g) Sugar
1 Tsp. (5g) Salt
2 large eggs (115g) at room temperature
3 ⅓ Cups (420g) Bread flour
2 ½ tsp. (12g) Instant Yeast
TO GREASE THE MOLD(S):
4 Tbsp (57g) Unsalted butter
FILLING:
1 packed Cup (220g) Dark brown Sugar
2 ½ Tbsp. (37g) ground Cinnamon
4 Tbsp. (57g) Unsalted butter, melted
FROSTING:
84g Cream Cheese (one 3oz package), softened
4 Tbsp. (57g) Unsalted butter, softened
1 ½ Cups (180g) Confectioner Sugar
½ Tsp. (3ml) Vanilla
⅛ Tsp. Salt
2 Tbsp. (30ml) Milk
Juice of 1 lemon

Roast pork loin
- pork loin
- salt
- 1 tbsp peanut oil
Method
1. Score the pork skin every 1cm, just through the skin and into the fat - you don't want to score the muscle.
2. Tie the loin with butcher's string, this will help the loin to keep its shape and cook evenly.
3. Place the pork onto a tray with a rack under it and then cover the skin side of the pork with lots of salt. Put it into the fridge overnight, at a minimum, but 24 hours is better.
4. When ready to roast, preheat the oven to 230c.
5. Brush off all the salt and pat dry the skin with a paper towel. Then brush on a little oil to the skin, season the underside of the pork loin and also a little more on top before placing it into the oven at 230c for 30 minutes. After 30 minutes, turn the oven down to 180c and continue to cook until you reach an internal temp of 65c (150f).
6. Let the pork rest for at least 15 minutes before carving.
Red cabbage
- 1/2 head red cabbage, sliced thin
- 50g butter
- 1 cinnamon stick
- 1 star anise
- 2 tbsp maple syrup
- 2 tbsp apple cider vinegar
Place everything in a large pot with a lid over medium-low heat and cook down, stirring often for 45 minutes or until the cabbage is tender.
Apple butter
- 4 Granny Smith apples
- 50g butter
- 2 tbsp sugar
- 2 tbsp apple cider vinegar
- 1 star anise
- 1 cinnamon stick
Place all the ingredients into a pot and over medium-low heat, cook down slowly for 1.5 hours.
Once cooked, puree and optionally add another knob of butter during this process.

Sweet Canela Cheese (Cinnamon Cheese)
This cheesemaking recipe is inspired from the first-place winner of the 2012 American Cheese Society contest, Canela, which is made by Emmi Roth USA in Wisconsin, USA. Canela, Spanish for cinnamon, is used as part of the spice mixture rubbed into the rind. This cheese presents a sweet smooth paste in its youth and matures into a beautiful dense texture over time. This cheese is an Hispanico style as it is made with cow’s milk rather than traditional Manchego sheep’s milk. These cheeses were molded with woven baskets, and the mold that developed on the rind was scraped off, then rubbed back into the pattern to create a stunning presentation. Use a Manchego mold to create that classic woven basket rind design in your own kitchen.

Size öyle bir lezzet hazırladım ki şekli şahane, tadını anlatamıyorum bile. O kadar enfes bir lezzet. Arasında esmer şeker ,tereyağı ,tarçın üçlüsünün buluşmasıyla ,karamelize olmuş tarçınlı çöreği mutlaka deneyin.

Bu efsane lezzeti nasıl hazırladım isterseniz yapımına geçelim.
Tarçınlı Çörek Hamuru Malzemeleri için;
-yarım su bardağı süt
-2 yemek kaşığı şeker
-2,5 çay kaşığı kuru maya
-3 su bardağı un
-125 gr tereyağı(soğuk küp küp doğranmış)
-2 adet yumurta
-3 çimdik tuz
Tarçınlı Çörek İç Harcı Malzemeleri için;
-yarım su bardağı esmer şeker
-yarım su bardağı toz şeker
-1/4 su bardağı tarçın
-70 gr tereyağı
Tarçınlı Çörek Üzeri İçin;
-pudra şekeri
Tarçınlı Çörek Yapılışı:
1)öncelikle mayamızı aktifleştiriyoruz ,yarım su bardağı ılık süt,2 yemek kaşığı toz şeker , 2,5 çay kaşığı instant maya(kuru maya)uygun kasede birleştirip kenara alıyoruz.
2)3 su bardağı un ve 125 gram soğuk küp küp doğranmış tereyağını ,unla harmanlayarak tanecikli kıvama gelinceye kadar ufalıyoruz.
3)unun ortasını havuz gibi açarak içerisine 2 yumurtayı ekleyip, çatalla biraz çırpıyoruz, aktifleşmesi için kenara ayırdığımız mayalı harcı ilave ediyoruz, unun kenarlarına 3 çimdik tuz serpip, içeriden unları yavaş yavaş bu karışıma alıp hamuru karıyoruz.
4)tamamen hamuru kardıktan ve yoğurduktan sonra 40-45 dakika dinlenmeye bırakıyoruz.
5)yarım su bardağı esmer şeker, yarım su bardağı toz şeker ve 1/4 su bardağı tarçını rondodan geçiriyoruz 70 gr tereyağını ilave edip karıştırıyoruz.
6)mayalanan hamuru bir merdane yardımıyla açıyoruz, dikdörtgen bir şekil veriyoruz(30x50 cm gibi)
