1 c Mashed potato 2 c Flour 1 ts Salt 1 Tbpp baking powder 2 Beaten eggs 1 c Milk 4 tb Light corn syrup 1 tb Nutmeg Do not expect these to be like American pancakes, but they have an excellent flavor. Celebrate St. Patrick’s Day this weekend and use up some leftover mashed potatoes by making this traditional Irish potato pancake!
2 medium potatoes, grated 2 c. flour 1 tsp. Baking powder 1 tsp. Salt 1 c. mashed potatoes 1 ¼ c. buttermilk - maybe more if batter is too thick Butter for the pan
Combine flour, baking powder and salt in a small bowl and set aside. In a large mixing bowl, combine grated potato and mashed potato. Add the flour and mix well. Slowly add the buttermilk, being careful not to overmix. It should be a thick, firm batter. Add more buttermilk if needed. Heat a frying pan on medium and add a pat of butter. Add a generous scoop of batter and flatten into a big pancake. Fry until golden brown on both sides. Add more butter and repeat until the batter is finished. Enjoy with either sweet or savory toppings. Some like their boxty with sour cream and scallions, others with more butter and jam. It’s also a delicious part of a traditional Irish breakfast.
How to make a Boxty, also known as potato pancakes. I use a mixture of fresh potatoes and leftover mashed potatoes to create delicious Irish potato cakes. Can be served plain, with sour cream, jam or however you like! Makes a great side dish! Full recipe here:

Cheese potato pancakes!
This is a really easy recipe using ingredients you likely have at home already! The mozzarella can be easily substituted for your favorite cheese - cheddar is a great option.
— I recommend using a scale to measure the ingredients for best results
1 russet potato (400g) 1 tbsp sugar (9g) 1/4 cup cornstarch (34g) Mozzarella cheese (10g each) Salt for boiling the water Plenty of oil for high heat cooking
Peel and dice your potato into small, even cubes. Boil in heavily salted water for about 12 minutes until soft and easily pierced with a fork. Drain the water when done and let it sit back in the pot for about 30 seconds to remove excess water. Add salt to potatoes if your water was not salted enough.
Add the cornstarch and sugar, then mash and mix well until combined. Separate into 5 pieces (80g each), roll into a ball, flatten it, add your cheese, then repeat the process.
Pan fry on medium high heat with enough oil to cover the pan entirely. It should cook for 4 to 5 minutes on each side until golden brown.
Serve with your favorite sauce & enjoy!

Boxty potato pancakes are a traditional Irish recipe and they come with a great little rhyme that we were taught growing up: 'Boxty on the griddle, boxty on the pan, if you can't bake boxty, sure you'll never get a man.’. The traditional recipe varies from region to region, but they all use grated raw potato. This is the version that my family makes and they are great with a full Irish breakfast.
