4 Lb. Fresh Mussels
1/4 Cup Olive Oil
1/2 Cup Chopped Onions
4 Cloves Garlic
finely chopped
1/2 Cup Green Pepper :
chopped
2 Cups Tomato Wedges
1/2 Cup White Wine
Parsley Sprigs -- for garnish
Remove beard and discard. Rinse mussels in cold water, discard broken or opened mussels. Saute onion, garlic, and green pepper in olive oil in a wok over medium heat for 30 seconds. Add mussels, tomatoes, and wine. Cover and cook for about 4 minutes (until mussels open). Shake pot occasionally while cooking.
Garnish with parsley.

Now what are Moule marinieres? well, In a nutshell it's mussel cooked with a mix of butter, shallots, garlic, celery and white wine. it is a dish that can be served with either white wine or beer and if you want to do it the belgian way then just add French fries on the side.
The proportions used in this video are enough to serve two people (starters size)
Ingredients used:
1 kG of Fresh Mussels
1 clove of garlic
A bunch of flat Parsley (1 tablespoon finely sliced)
A small branch of celery (finely diced)
10 grams of unsalted Butter
200 milliliter of Dry white wine (example: sauvignon blanc)
1 bay leaf
A few twigs of thyme
Salt and pepper (to correct the seasoning of the sauce if needed)
1 tablespoon of double cream (optional)

Steamed mussels in a white wine & tomato broth is a delicious restaurant quality dish that you can put together in minutes in your own kitchen! It is important to clean off the mussels with a brush, and to discard any mussels that have already opened up before cooking.
Ingredients:
-2 pounds mussels
-1 ¼ cup dry white wine
-1 ¼ cup hand crushed San Marzano tomatoes
-4 cloves garlic minced
-2 small shallots minced
-2 TB extra virgin olive oil
-1 TB butter
-Crusty Italian bread
-Salt & pepper
-Crushed red pepper flakes
Directions:
-Clean mussels with a brush.
-Discard any mussels that have already opened.
-In a large pot, cook the garlic and shallots in the olive oil on
medium heat for about 3-4 minutes or until softened.
-Add the wine and the tomatoes and season with salt, pepper, and red pepper flakes to taste. Turn heat up to medium-high and bring
to a boil.
-While the tomato wine broth is heating, but a loaf of Italian bread into thick slices. Drizzle with olive oil, salt, and pepper on both sides, and char them under the broiler for 2-3 minutes on each side.
-Once broth has come to a rapid boil, add the mussels, stir to evenly distribute, cover, and cook for 4 minutes or until the mussels have opened. Be sure not to overcook!
-Serve the mussels with the Italian bread & enjoy!

Ingredients:-
2 lbs of fresh mussels (900 grams)
1/4 cup extra virgin olive oil
3 large cloves of garlic sliced
1/4 cup chopped fresh parsley plus a few sprigs to garnish
2 chili peppers or 1 tsp crushed red pepper flakes
3/4 white wine (170 ml)
28 ounces San Marzano peeled tomatoes or chopped tomatoes (800 grams).
Directions:-
Step#1 - In a large sauté pan on high heat add the oil, garlic, chili pepper, and parsley.
Step#2- Sauté until garlic is golden, add the white wine (Pinot Grigio) and let it evaporate.
Step#3- Once the oil starts frying again add the tomatoes. If you’re using plum tomatoes crush them with your hands. Lower the heat to medium and let it cook for 10 minutes.
Step#4- Rinse mussels under cold water and remove the beard that’s on the side.
Step#5- Once marinara is cooked add the mussels and higher the heat.
Step#6- Place lid on the pan and every 2 minutes give it a shake.
Step#7- After 5 minutes remove the lid and let some water evaporate for a couple of minutes.
They are now ready to eat!
