How To make Jamaican Chicken
4 Chicken breast halves
(4 oz each) :
skinned, boned 2 1/2 tb All-purpose flour
1 tb Flaked coconut, minced
1 ts Curry powder; divided
1/2 ts Salt
1/4 ts Pepper
1 Egg white; lightly beaten
Vegetable cooking spray 2 ts Reduced-calorie margarine
divided 1 md Banana; cut into 1/2" slices
3/4 c Unsweetened pineapple juice
3 Green onions; cut diagonally

into 1/4" pieces 2 c Cooked long-grain rice
-- (cooked w/o salt or fat) Place the chicken between two sheets of heavy-duty plastic wrap and flatten to 1/4" thickness, using a meat mallet or rolling pin. Combine the flour, coconut, 1/2 teaspoon curry powder, salt and pepper; stir well. Brush both sides of each chicken breast with the egg white; dredge in the flour mixture. Set aside. Coat a large nonstick skillet with cooking spray; add 1 teaspoon of the margarine. Place over medium-high heat until the margarine melts. Stir in the remaining curry powder. Add the banana and saute two minutes or until the banana is lightly browned. Remove the banana from the skillet and set it aside. Wipe the drippings from the skillet with a paper towel. Coat the skillet with cooking spray; add the remaining margarine. Place over medium-high heat until the margarine melts. Add the chicken and cook two minutes on each side or until browned. Add the pineapple juice and green onions. Cover, reduce the heat and simmer ten minutes or until the chicken is tender. Serve over the rice. Garnish with the banana slices. Oven Jerk Chicken Recipe
Ingredients List

2kg chicken legs
1 tsp sea salt
2 tsp black pepper
1 tsp all purpose seasoning
1/2 tsp all spice
1 tsp ginger
1 tsp oil
1-2 tbsp green seasoning
2-3 tbsp jerk seasoning
1/2 tsp gravy browning
Bake for 1hr. 5 minutes on 200•C for 30 minutes then tilt the tray to one side and pour the juices into a bowl. Pour onto the chicken and bake for a further 25 minutes. In the last 10 minutes turn up the heat to 250• so it can char slightly mimic the jerk chicken look.
Always taste and adjust seasonings as my recipe acts only as a guide. Individual tastebuds are different and substitutions can be made throughout.) Terri

Jerk Chicken Full Recipe:
marinade: save 25% for the jerk butter sauce
2 bunch scallions
1 large onion
2 habanero pepper (scotch bonnet is better if you can find them)
10 sprigs thyme plucked
10 garlic cloves
1/3 cup lime
1/3 cup orange juice
1/2 cup soy sauce
1/2 cup coconut sugar or brown sugar
2 TBSP distilled white vinegar
1 tsp cinnamon
1/2 tsp nutmeg
1 TBSP coriander
1 1/2 tsp black pepper
1 TBSP allspice
3 tbsp unsalted butter
2 whole chickens with the spines removed

HOW TO COOK JAMAICAN AUTHENTIC BROWN STEW CHICKEN
RICE & PEAS AND PLANTAIN
BROWN STEW CHICKEN FOR BEGGINERS
....What you will need....
4 pound Chicken
Scallion
Tyme
Tomato
Onion
Hot pepper
Pimento seed
Bell pepper
Ginger
Fresh garlic
1 tsp salt(as needed)
1 tsp black pepper
1 tsp vinegar
1 tbsp paprika
2 tbsp onion powder/2 tbsp garlic powder
1 tbsp all purpose seasoning
2 tbsp chicken seasoning
2 tbsp corn starch
1/4 cup ketchup
3 tbsp brown sugar
2 tbsp browning(as needed)
Add 1 cup water
Cover & Simmer on medium heat
For at least 30 mins
