2 lb Lean boneless lamb 1/4 c Soy sauce 1 tb Honey 2 tb Vinegar 2 tb Sherry 2 Garlic cloves 1/4 ts Ground ginger 1 1/2 c Bouillon Before cooking: Cut the lamb into strips that are 1/8 inch thick, 1/2 inch wide and 3 inches long across the grain. Combine the remaining ingredients (crushing the garlic with a garlic press), and pour the mixture over the meat. Turn the meat to coat it well and let it stand uncovered for 1 hour at room temperature - or covered overnight in the refrigerator. Turn the meat occasionally so it gets seasoned evenly. Weave the meat onto skewers. Broil them about 4 inches from the heat source for about 2 minutes on each side. Makes 8 servings. Calories per serving: 248
Turkish chicken kebabs / skewers or a.k.a tavuk şiş in Turkey. It is said that the method of cooking meat on skewers over open fire originated on the steppes of Central Asia where the Turkic people originate. This basic concept was refined over time and was brought to the world with the westward migration of Turkic people.

Moroccan Kebab or Qotban: Marinated Meat Skewers Grilled To Absolute Perfection. You’ll find this traditional street food throughout Morocco, but it couldn’t be easier to make at home. 2.25 lbs boneless leg of lamb cut into 1” cubes 1 medium onion, finely grated 1/4c fresh parsley, finely chopped 1/4c fresh cilantro, finely chopped 1.5t ground cumin 1.5t ground paprika .5t ground black pepper 3T Olive Oil Salt to taste Skewers (pre-soaked if using wooden skewers In a large bowl, combine lamb, parsley, cilantro, cumin, paprika, black pepper, olive oil and salt. Mix until the lamb is evenly coated. Cover the bowl and refrigerate for at least 2 hours allowing the flavors to infuse into the meat. When you’re ready to grill, prepare the grill and thread the marinated lamb pieces onto the skewers leaving no space between each piece. Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Enjoy in a sandwich or on their own and always alongside mint tea!
