Ingredients 4-6 tablespoon olive oil, extra virgin 6-8 each garlic, cloves, or to taste, minced 1 each tomatoe, large, fresh, diced small, seeded 1 cup parsley, fresh, chopped 1
pasta, spaghetti preferred, but can use any
Directions: On minimum slowly heat minced garlic in olive oil. While pasta is cooking chop tomatoe and parsley. Drain cooked pasta and toss with the heated garlic and olive oil, tomatoe and parsley. Serve and drizzle a small amount of raw olive oil on servings. Laurie's Notes: This pasta dish is requested weekly in my house. Being italian I would have pasta often, but with a typical meat sauce and veggies. Since I started making this version, I've not gone back! The more garlic the better and a of course the parsley has got to be fresh! - Enjoy!
