How To make Lemon Dilly Chicken Saute
4 ea Breasts, chicken, halves,
broiler/fryer, boned, :
skinned 1/2 c Breadcrumbs, dry
1 t Pepper, lemon
1/4 ts Dill, dried
3 tb Juice, lemon
2 tb Oil, olive
Pound the chicken pieces until they're about 1/4-inch thick.
In a shallow dish mix together bread crumbs, lemon pepper, and dill weed. Pour the lemon juice in a second dish. Add chicken, one piece at a time, first to the lemon juice, then to the crumb mixture, turning to coat on all sides. Put the oil in a large non-stick frying pan over medium-high heat. Add chicken and cook, turning, about 10 minutes or until chicken is brown and fork tender.

One Pot Creamy Lemon Dill Chicken Soup
This recipe is from Hello Fresh. However, I decided to cook it MY way, in the order I saw fit. Pretty sure mine turned out just as good as theirs.
It's pretty quick and easy. Just wash, chop, boil and stir!
Ingredients:
2 chicken cutlets (10 oz)
2.5 oz couscous
1 large carrot
4 small celery stalks
2 green onions (saute the white bulbs and use green ends for garnish)
1 small clove garlic
1/4 cup fresh dill (I added more dried dill from my spice cabinet)
1 lemon
3 packets chicken stock concentrate
2 small packets creme fraiche
Salt (to taste)
Pepper
Wash and cut up produce. Place pat of butter or oil in non-stick soup pot. (Mine is teflon coated)
Saute veggies and garlic over medium heat til soft, roughly ten minutes.
Turn heat up to HIGH and add 3 quarts water to pot with sauteed veggies, etc.
Once at a rolling boil, add rinsed and dried chicken cutlets
reduce heat and boil covered for 15 minutes, stirring occasionally.
While cooking chicken, add couscous and chicken stock concentrate packets. (I don't show that in the video. Sorry!)
Cover and cook 10 more minutes or so.
Chicken should be done by now. Remove from pot, cut up or shred chicken on cutting board and return to pot.
Add creme fraiche and dill. Squeeze lemon into soup per your own preference. A little or a lot!
Simmer soup for another 5-10 minutes, until creme fraiche is broken up.
Garnish with green onions and whatever else you like!
I found a dollop of sour cream made it a little extra creamy. :)
A buttery croissant is perfect to soak up some soup as well. My Achilles heel!
