How To make Lemon Meringue Kisses
2 large egg whites
room temperature
pinch salt 2/3 cup sugar :
sifted
1 teaspoon lemon zest -- finely grated
1/4 teaspoon vanilla extract
OVEN: 250
Cover 2 baking sheets with parchment or foil.
Beat egg whites with salt til soft peaks form. Add sugar very slowly, beating well between additions, til egg whites are stiff but not dry.
Fold in lemon zest and vanilla.
Drop by teaspoonfuls onto the baking sheets or pipe small kisses with a pastry bag fitted with a 1/2-inch star tip.
Bake til dry, but not brown, 40 to 45 minutes. Cool 2 to 3 minutes before removing from baking sheets.
(Can be stored up to 2 weeks in an airtight container.)

NB. Don't use Granulated sugar as it's too course and will take too long, meaning you will over-beat your meringue. Don't use powdered/icing sugar as there are additives in this sugar which may have an adverse effect on the meringues. You will need Electronic Scales for the perfect meringues. Please don't ask me for conversions. If you want to work it out on your own, go nuts but I would recommend this investment!!

2:1 Sugar to Eggs (ie. 100 grams of egg whites, 200 grams of caster sugar)

Ingredients
Egg whites - 4
Sugar - 1 cup
Corn flour - 2 tbsp
Lemon juice - 2 tbsp
Salt
Method
Whisk egg whites with salt, corn flour and lemon juice. slowly add sugar and whisk continuously until you get stiff peaks. If you want to add colors add red cabbage juice. Put the mixture in piping bag and make cookies. Bake it in 180 degree pre heated oven for 23 minutes.

Mix eggs on low speed until foamy. Add cream of tartar, pinch of salt, and vanilla extract. Mix on medium high slowly adding the sugar until when the mixer is pulled out it keeps its peaks. Place batter in pastry bag and place in 1 teaspoon shapes. Bake for about 40-45 minutes at 200º. Enjoy!
