How To make Lemon Meringue Pie From Mccall's Cooking Scho
1 Pastry for one pie crust
LEMON FILLING:
1/4 ts Cornstarch
3 tb Flour
1 3/4 c Sugar
1/4 ts Salt
4 Egg yolks, lightly beaten
1/2 c Lemon juice
1 tb Grated lemon peel
1 tb Butter
MERINGUE:
4 Egg whites
1/4 ts Cream of tarter
1/2 c Sugar
On lightly floured pastry cloth, roll the pastry to an 11 inch circle, rolling with light strokes from center
to edge. Fold pastry in half; with fold in center, carefully transfer to a 9 inch pie plate. Unfold; fit into a pie plate, pressing gently toward the center. Fold edge of crust under; press into an upright rim. Crimp edge decoratively, using thumb and forefinger. Refrigerate 1/2 hour. Preheat oven to 450 degrees. Prick entire surface evenly with fork. Bake 8 to 10 minutes, or until golden-brown. Cool on rack. In medium sauce pan, combine cornstarch, flour, 1 3/4 cups sugar and salt, mixing well. Gradually add 2 cups water, stirring until smooth. Overy medium heat, bring to boiling, stirring occasionally; boil 1 minute, until shiny and translucent. Quickly stir some of hot mixture into yolks. Pour back into hot mixture; stir to blend. Return to heat; cook over low heat 5 minutes, stirring occasionally. Remove from heat; stir in lemon juice, lemon peel and butter. Pour into pie shell. Preheat oven to 400 degrees. In medium bowl, with mixer at medium speed, beat whites with cream of tartar until frothy. Gradually beat in sugar, 2 T at a time, beating after each addition. Beat at high speed until stiff peaks form when beater is slowly raised. Spread meringue over lemon filling, carefully sealing to edge of the crust and swirling thetop decoratively. Bake 7 to 9 minutes, or until the meringue is golden-brown. Let cool completely on rack 2 1/2 to 3 hours. Cut with wet knife.

Simply the Best Sweet Potato Pie, Ever!
This is my famous sweet potato pie recipe that’s taken me over five years to perfect. I am pleased to share it with you so that you can share the love and deliciousness with your own families. But please watch this in its entirety as there are important tips and steps and only roast the sweet potatoes as in my video about roasting them for the sweetest, richest tasting flavors. It’s important. I’ve added that video link at bottom. The extra care and time is so worth it!

4 medium Roasted sweet potatoes (watch link)
3/4 c melted butter
5 oz can evaporated milk
4 eggs, lightly beaten
2 c sugar
1/4 c brown sugar
1 tsp cinnamon
1/4 tsp Pumpkin pie spice
1/8 tsp Allspice
1/8 tsp salt
Dash of cloves
Then 2 Tbsp of butter in addition to other butter
2 - 9” regular pie shells

I realize I could have had a better outcome if I'd focused on a single dish or done more prep work, but I didn't think that would be very interesting to watch at all!
I'm decently competent at following one or two recipes I'm familiar with at a time - taking on so many with such vague instructions was part of the fun (for me, at least)!

It is being eaten!!
My dad (not a raisin fan) even liked the sultana sauce and marinated steaks in it the next day haha!
I added sriracha barbecue sauce to the potatoes and steak when eating leftovers which made them way better.
Cauliflower was a hit.
I still really like the relish. It went a bit soggy in the fridge, but I've been putting it on lettuce to make salads more interesting and on sandwiches.
The meringue turned to a hardened lump in the fridge :( I may scrape the lemon filling onto ice cream...

The gluten free flour used is Red Mill 1-to-1 Baking Flour BUT Cup 4 Cup Gluten Free Flour Blend is better for baking; it isn't bean based and doesn't have an aftertaste in pastry. It's just more expensive and harder to find.
