Ingredients:
250 grams chicken thigh fillet (skin on)
4 stalks lemongrass
1 medium white onion (sliced)
1 medium white onion (chopped)
2 cloves garlic
thumb-sized ginger
1 big red chili
2 tbsp cooking oil
MARINATE:
2 tbsp lemongrass (minced)
1/2 tbsp soy sauce
1/2 tsp ground black pepper
1/2 tbsp fish sauce
1/8 tsp salt
SAUCE:
2 tbsp fish sauce
1/4 tsp ground black pepper
2 tbsp lemon extract
2 1/2 tbsp brown sugar
3 tbsp water
GARNISH:
sliced cucumber
cilantro

Easy Lemongrass Chicken Stir Fry
Today we're making Vietnamese Lemongrass Chicken. This is super easy to make, perfect over rice and one of my favourite dishes for a weekday dinner.
This is also the best marinade for grilling chicken with. Just make sure you give more time to marinade if you're grilling.

Ingredients:
- 300 grams of chicken thigh/leg meat
- Lemongrass marinade, blitz together:
- 2 stalks of lemongrass, just the white inner stalk
- 2 cloves garlic
- 1 onion
- 1 tablespoon fish sauce
- 1 tbsp soy sauce
- 2 tsps of brown sugar
- White Pepper
- Juice from 1 Lime
- 1 Red Chilli for colour (optional)
- Cilantro

VIETNAMESE LEMONGRASS PORK CHOPS⤵️
My husband doesn’t like pork chops but I told him to take one for the team and eat it for dinner because y’all have been asking me for a recipe… he said ok! Haha I usually only things that we both can eat. Sometimes I’ll make things he likes that I don’t and I’ll just suck it up and eat it and vice versa
INGREDIENTS
6 pieces of pork chop (I used bone in)
12 cloves minced garlic
3 TBSP minced lemongrass
3 TBSP fish sauce
3 TBSP honey
6 TBSP oil
1 tsp black pepper
1. Flatten your pork chop with a mallet being careful to avoid the bone. Then cut slits onto the side with the fat to avoid it from curling when you cook.
2. Then clean your pork how you normally would. I like to soak my pork in water and salt for 10 minutes. And then rinse and drain under cold water.
3. After you’ve cleaned your pork, marinate your pork chops with: minced garlic, minced lemongrass, fish sauce, honey, oil and black pepper. Marinate for at least 3 hours or over night for best results.
4. After your pork has been marinating, you can cook on a skillet, oven or airfryer.
5. TO COOK:
- STOVETOP: Heat up some oil. Cook on skillet 4-6 minutes on each side depending on thickness of pork chops (medium heat)
- OVEN: Bake at 375F for 15 minutes on each side
- AIRFRYER: 375 for 30-35 minutes flipping half way through
6. Serve with rice, veggie of choice and fish sauce dip
FISH SAUCE DIP
1/4 cup fish sauce
1/4 cup sugar
12 oz coconut soda/ coco rico or water
2 TBSP white vinegar
5 cloves minced garlic
Garlic chili paste (sambal) - optional
Chopped Thai chili - optional
- mix this all together til sugar dissolves

VIETNAMESE LEMONGRASS CHICKEN | Su's Cookbook
Vietnamese Lemongrass Chicken Recipe

Ingredients:
500gm chicken (thigh part would be ideal)
1 yellow onion, sliced thickly
5 lemongrass, chopped finely (tender inner white bulbs)
5 cloves of garlic, finely chopped
Mix of fresh red chilli and Bird’s eye chilli
Black and White pepper powder
Fresh coriander leaves
Oil and water for cooking
Sauce mix:
2 tbsp fish sauce
2 tbsp sugar
¼ tsp corn flour

Method:
Heat up some oil in a pan over medium low flame and saute the chicken till it turns golden brown. Then, add the lemongrass and garlic and stir-fry for a few minutes.
Now, add in the onion and chilli, cook for 3 minutes. In between do sprinkle some water, to keep the chicken moist. Also, add some white and black pepper powder.
Then, add the sauce and mix well until everything is combined well. Cook for another 2-3 minutes, till the chicken is caramelized, then turn off the flame.
Garnish with fresh coriander leaves and serve while it’s hot! :)
