How To make Little Phyllo Cheesecakes
8 Frozen phyllo pastry; thawed
1/2 c Butter or margarine; melted
3 pk Cream cheese (3-oz);
-softened 1/2 c Powdered sugar; sifted
1 1/2 ts Orange rind; grated
1 tb Orange juice
1/2 c Orange marmalade
2 ts Orange juice

Place one sheet of phyllo on a damp towel (keep remaining phyllo covered). Lightly brush phyllo with melted butter. Layer 3 more sheets phyllo on first sheet, brushing each sheet with butter. Repeat to make another stack of 4 sheets phyllo. Cut each stack of phyllo into 3-inch squares using kitchen shears. Brush miniature muffin cups with melted butter. Place one square of layered phyllo into each muffin cup, pressing gently in center to form a pastry shell. Bake at 350 degrees for 8 to 10 minutes or until golden. Gently remove from pan, and let cool on wire racks. Combine cream cheese, powdered sugar, orange rind, and 1 tablespoon orange juice in a small mixing bowl; beat at high speed of an electric mixer until blended and smooth. Spoon 1-1/2 teaspoons cream cheese mixture into each pastry shell. Combine orange marmalade and 2 teaspoons orange juice; top each cheesecake with 1/2 teaspoon orange marmalade mixture. NOTE: Phyllo shells may be made up to 2 days in advance, and stored in an airtight container. Fill shells up to 4 hours before serving, and keep chilled until ready to serve. -----

Cheesy Phyllo Rolls

Ingredients
about 6 oz salted butter, melted
1 pound (#4) phyllo, thawed and at room temp.
The Cheese filling:
8oz (350g) feta cheese
8oz (200g) shredded mozzarella cheese
8 oz (230g) cream cheese at room temp.
1 teaspoon finely chopped mint
1 teaspoon dried crushed oregano
freshly cracked black pepper, to taste
Instructions
Preheat the oven to 350 °F, 180 °C.
Line 2 baking trays with parchment paper and set aside.
Make the Cheese Filling:
Combine all of the filling ingredients together in a bowl and mix until incorporated.
Assemble the Rolls:
Take one sheet of phyllo, drizzle some melted butter over top. Fold it in half lengthwise. Place a tablespoon of the cheese filling at the bottom of the pastry, keeping it centered.
Fold over both sides (right and left long sides) of the phyllo over the filling.
Drizzle with some more melted butter.
Roll the pastry all the way up. Place on the prepared baking tray.
Keep doing this until all of the phyllo and/or cheese filling are finished.
Brush the tops of the rolls with melted butter and pierce using a fork so that the steam escapes during baking.
Bake on the center rack of the preheated oven until golden and crisp. 35-40 minutes.

Freezer Instructions: Assemble the pastries and chill in the freezer until firm. Either transfer the frozen rolls to a freezer-safe bag or wrap the tray in plastic wrap and keep frozen up to 3 months. Bake frozen at 350 °F until golden and crisp.

You can buy the Phyllo cups or make them at home. I suggest you make them by yourself.
Why do you need them? You can prepare various appetizers or desserts with them. Their fillings can be very varied.

Кошнички от фини точени кори
Днес моят пост не е точно рецепта, а начин как да си направите в къщи кошнички от фини точени кори.
Тези кошнички са много красиви, хрупкави и вкусни. Те могат да се приготвят за десерт, за предястие или за лека закуска. Всичко зависи от пълнежа който ще приготвите.
Приготвят се лесно и бързо. Ще ви покажа два начина.
За 12 кошнички
Съставки:
4 листа от точените кори
40 гр.разтопено масло
Приготвяне:
Загрейте фурната на 175 градуса.
Разтопете маслото в микровълновата. Намажете формата за мъфини с масло.
Използвайте 4 листа от корите за баница. Сложете ги един върху друг и ги нарежете на 12 квадрата. (Разделете дължината на 4, а ширината на 3)
Вземете един квадрат, който има 4 листчета и останалите ги покрийте с кърпа, за да не изсъхват.
Първи метод:
Вземете едното листче, намажете го с масло и го сложете във формата за мъфини. Намажете следващото с масло и го сложете върху другото във формата, но го завъртете, ъглите им да не съвпадат. И така продължете с останалите.
Втори метод:
Отделете едно листче и го намажете с масло. Вземете второ листче и го сложете върху второто като внимавате да не съвпадат ъглите. Тук целта е да направите нещо като звездничка. Продължавате със следващите по същият начин. След като сложите последният (четвъртият) намажете и него с масло и сложете така наречената звездичка във формата за мъфини.
Каква всъщност е разликата между двата метода? При първият начин остава по малко въздух между корите и те стават по хрупкави, но формата им не е от най-правилните. Докато при вторият метод, се получават по стегнати кошнички, но корите са залепени една за друга.
Преди да ги сложите във фурната ги намажете с масло, но внимавайте, ако правенето на кошничките ви е отнело повече време, то тези във формата за мъфини са вече изсъхнали и когато ги мажете с четката може да счупите връхчетата. Така че може съвсем леко да ги напръскате.
Изпечете във предварително загрятата фурна за около 7-8 минути. Внимавайте и ги наглеждайте, защото могат много лесно да прегорят.
Оставете ги да изстинат върху решетка и ги напълнете с предпочитан от вас пълнеж!

I think the best part of pastry is often that crunch made possible by a small(????????????) amount of butter or shortening. Sometimes the pastry dough can kind of overwhelm the filling or primary flavor. What's the solution? Filo dough! Paper thin sheets of dough that you butter and layer for the best crunch ever! They definitely allow the filling to shine through too. My mom would make all sorts of things with filo dough but the easiest way to use them IMO is to make little cups for the perfect party bites. I filled these with a tratitional Greek mixture of feta, dill, lemon, corriander and some American cream cheese ???? Full recipe up on the blog!
