Recipe in English:
Ingredients:
-Peek Freans Saltish biscuits 70g (1 & ½ pack) (25 biscuits)
-Makhan (Butter) melted 40g
Prepare Salted Caramel Sauce:
-Sugar ½ Cup
-Water 1-2 tbs
-Makhan (Butter) 20g (1 tbs)
-Cream ¼ Cup (50ml)
-Namak (Salt) ¼ tsp
Prepare Cheese Cake:
-Whipping cream 100g
-Icing sugar 2 tbs
-Cream cheese 100g
-Gelatin powder 2 tsp
-Hot water 2 tbs
-Whipped cream
-Saltish biscuits
Directions:
-Wrap one side of 2.5 x 2.5-inch round cheese molds with cling film,place them on a tray & set aside.
-In a chopper,add saltish biscuits & chop well.
-Add butter & chop until well combined.
-Add 2 tbs of crumbled mixture in cling film wrapped cheese molds & press firmly to set an even layer & refrigerate for 30 minutes.
Prepare Salted Caramel Sauce:
-In a saucepan,add sugar,water & turn on the flame,cook on very low flame until sugar is caramelized & turns brown and gently stir pan few times in between to mix.
-Add butter & mix well.
-Turn off the flame,add cream & whisk until well combined.
-Add salt & whisk well.
-Let it cool at room temperature.
Prepare Cheese Cake:
-In a bowl,add whipping cream & beat well until stiff peaks form.
-Add icing sugar,cream cheese & beat well.
-Add half quantity of prepared salted caramel sauce & beat until well combined & reserve half quantity of salted caramel sauce for garnishing.
-In a small bowl,add gelatin powder,hot water & whisk well.
-Now add dissolved gelatin in a bowl,beat well & transfer to a piping bag.
-Pipe out salted caramel cheese filling in molds,spread evenly & freeze for 4-5 hours in freezer.
-Take out mini cheese cakes from molds,garnish with whipped cream,drizzle salted caramel sauce & saltish biscuit & serve (makes 4-5).

Prepare Salted Caramel Sauce:
-Saucepan mein cheeni aur pani dal dein,chulha on karein aur bohat halki ancch per cheeni caramelized & brown ho janay tak paka lein & bech bech mein few times pan ko stir ker lein.
-Makhan dal ker ache tarhan mix ker lein.
-Chulha bund ker dein aur cream dal ker ache tarhan whisk ker lein.
-Namak dal ker ache tarhan whisk karein.
-Room temperature per thande ker lein.
Prepare Cheese Cake:
-Bowl mein whipping cream dal dein aur stiff peaks form hunay tak ache tarhan beat ker lein.
-Icing sugar & cream cheese dal ketr ache tarhan beat ker lein.
-Tayyar salted caramel sauce ki half quantity dal dein aur ache tarhan beat ker lein aur baqi salted caramel sauce ko garnishing kliya rakh dein.
-Small bowl mein gelatin powder aur hot water dal ker ache tarhan whisk ker lein.
-Bowl mein dissolved gelatin dal ker ache tarhan beat ker lein & piping bag mein transfer ker lein.
-Molds mein salted caramel cheese filling ko dal ker evenly pheela lein & freezer mein 4-5 hours kliya freeze ker lein.
-Mini cheese cakes from ko molds sa nikal lein,whipped cream,salted caramel sauce & saltish biscuits sa garnish ker ka serve karein (makes 4-5).

KEYLIME PIE CHEESECAKE
Serves 8

INGREDIENTS:
4.5 oz (125g) of chocolate wafer cookies
1 tsp (5 ml) sugar
pinch of salt
3 tbsp (45 ml) butter, melted
16 oz (452 g) of whipped cream cheese
1/3 cup (65 g) of sugar
2 eggs
1 ½ tsp (7.5 ml) vanilla
2 tbsp (15g) flour
1 14-oz (400 ml) can Sweetened Condensed Milk
4 egg yolks
½ cup (120 ml) key lime juice (about 12-13 key limes + one more key lime for the garnish)
2 cups (480 ml) heavy cream
2 tbsp (13 g) powdered sugar
1 tsp (5ml) vanilla extract
METHOD:
Preheat oven to 350F (176C). Spray a spring form pan with baking spray and distribute well with a pastry brush and set aside.
Place the cookies, the sugar and salt in a food processor. Process until crumbs form. Add melted butter, continue to process until wet crumbs form. Transfer crumbs to the spring form pan and shake the pan to level the crumbs and then press them tin with a measuring cup or the bottom of a glass.
Bake crust for 5-6 minutes until fragrant. Allow to cool.
In the bowl of an electric mixer, combine cream cheese and sugar, beat on high until smooth. Add eggs, one at a time, beating in between each addition. Add vanilla extract and beat and then add flour and beat just until combined.
Pour cheesecake filling into cooled cookie crust, smoothing out with a spatula until layer is leveled out. Set aside.
In a large mixing bowl combine sweetened condensed milk, egg yolks and key lime juice. Whisk until smooth.
Pour the key lime mixture on top of the cheesecake mixture, making sure you are covering all the cream cheese with the pie filling. Smooth out with a small spatula.
Bake in a 350F(176C) oven for 35-40 minutes until cheesecake is set and jiggles slightly.
Allow to cool completely.
For whipped cream topping, combine heavy cream, powdered sugar and vanilla in the bowl of an electric mixer. Whip on high until stiff peaks form. Transfer to a pastry bag with a round tip. Pipe little dollops of whipped cream all of over cheesecake until covered.
Garnish with fresh lime zest on top and a thinly sliced lime wheel in the center. Chill overnight to set.

Base:
200g Oreo’s, finely crushed
60g Unsalted butter, melted
Cheesecake:
400ml double cream, cold
5 tsp cocoa powder
350g cream cheese, room temp
100g icing sugar
100g milk or dark chocolate, melted & cooled slightly
Optional topping:
Melted milk or dark chocolate
Chocolate chips
Makes 9 ????
Tip: If you prefer the chocolate whipped cream a bit sweeter, add 50g of icing sugar with the cocoa powder ????
