• 2 cups heavy cream (grass-fed)
• 1 cup coconut milk
• 4 large eggs (pasture-raised)
• 3 tbs. xylitol (or swerve)
• 1 tsp – vanilla
• 2 tsp – cinnamon
• 1 tsp – all spice

Ingredients:
5 cups sugar free (or unsweetened) almond milk
2.5-3 ounces sugar free vanilla pudding
1/4 tsp nutmeg
1/4tsp allspice
1/8 tsp ginger
1/2 cup artificial sweetener (monkfruit, stevia)
Blend 2 cups milk with pudding, sweetener, nutmeg, allspice, and ginger on medium-high until smooth. Periodically stop blending and use a spatula to scrape pudding mix off the side of the blender as needed. Blend remaining three cups of milk into mixture until well blended. Refrigerate eggnog until thickened or serve immediately.
Note: Adjust seasonings and milk ratio to individual preference.

After 47 batches over the span of 2 months I can confidently present to you the recipe for my Eggnog Ice Cream! Clocking in at just 365 calories for the ENTIRE pitcher, this cream is sure to please and smash any cravings you have for that noggy goodness!

Ingredients -
Wet:
- 200ml Almond Milk (Frozen)
- 65ml Almond Milk
- 30ml Torani Sugar Free Vanilla Syrup (Any Sugar Free Coffee Syrup will work)
- 4.2ml Vanilla Extract
- 1.5ml Rum Extract
- 1ml Butter Extract
- 12g Sweetener
- 115g Greek 0% Yogurt
- 1 Large Egg
- 260g Ice (smaller chunks of ice result in less ice chunks in final product.)
- 4-5 drops Yellow Food Coloring (optional)
Dry:
- 7g Vanilla Sugar Free Pudding Mix
- 1.5g Guar Gum + 1.5g Xanthan Gum (or 3g total if only using one)
- 1g Salt
- 1.5g Cinnamon
- .5g Nutmeg
- .4g Ginger (I used the Powdered Ginger from McCormick)
- 44g (1 1/3 scoops) Vanilla Whey Protein (This ratio does matter for different brands, I used BodyBuilding for this recipe. If using a different brand, start with the 1 1/3 scoops and see how it goes from there.)
