How To make Lowfat Fettuccine Alfredo
Ingredients

pound
fettuccine
1/2
cup
cottage cheese, nonfat
1/2
cup
skim milk, evaporated
1/2
teaspoon
arrowroot, or rice flour
1
salt, to taste
1
pepper, to taste
1
teaspoon
garlic powder (optional)
1
teaspoon
onion powder (optional)
2
teaspoon
parsley, fresh, minced
1
parmesan cheese, grated, for garnish
Directions:
Cook fettuccine and drain. Meanwhile, combine cottage cheese, skim milk, arrowroot, salt and pepper, and garlic and onion powders if desired, in a blender. Puree until smooth. Transfer mixture to a heavy skillet or saucepan, add parsley and warm over medium-low heat for 10 minutes. Do not let sauce boil. Remove from heat and pour over hot, drained noodles. Sprinkle with parmesan.
Variations: use tomato or spinach fettuccine, and garnish with sun-dried tomatoes and chopped fresh basil.
Or lightly steam 1 cup broccoli florets for 3 to 4 min, until tender-crisp. Toss with sauce and hot pasta.
Or saute 3/4 cup sliced mushrooms in 2 tb red wine. Toss with sauce and hot pasta.
Per serving: 452 cal; 19g prot; 5g fat; 80g carb; 104mg chol; 424mg sod; 0.4g fiber.

If i had to choose one food to eat forever, it would always be pasta! This Chicken Alfredo is incredibly delicious, so creamy and easy to meal prep!
Macros per serving (4 total)
511 Calories | 51g Protein | 45g Carbs | 12g Fat
Ingredients (4 Servings)
- 700g Chicken Breast (2 chicken breasts cut into thinner fillets)
- 1 tbsp Italian Herbs
- 1 tbsp Smoked Paprika or regular Paprika
- 1 tbsp Garlic Powder
- 1 tsp Salt & Pepper
- 2 tsp Olive Oil
- 560g Cooked Spaghetti Pasta
- Garnish with Parsley
Alfredo Sauce
- 300ml Low fat Milk or regular Milk
- 150g Light Cream Cheese (Brand: Philadelphia)
- 40g Parmesan
- 1 tsp Italian Herbs , Salt, Pepper
- 50-70ml Pasta Water

Important cooking notes:
- When seasoning the chicken make sure you cover both sides evenly
- Cook the chicken on medium low heat for 3-4 mins on each side. You don’t want the seasoning to burn
- When adding the alfredo sauce to the pan, make sure the heat is on low. Stir gently till it thickens then add the cooked pasta

A viewer recently requested pasta recipes which gave me the perfect change to share this lightened up recipe. Not only is it delicious and way healthier than classic Fettucini Alfredo, it's also a super easy weeknight meal.
If you're feeding a family, you can get this on table in 20 minutes. If you're new to cooking, all you have to do is cook pasta and, in only one other pan, make a sauce that comes together in a snap.
Here are my foolproof tips for cooking pasta perfectly—even ahead of time:
To make this Skinny Fettucini Alfredo, you'll need:
* 1 lb fettucini pasta
* 2 tablespoons olive oil
* 3 cloves garlic, chopped
* 2 tablespoons flour
* 1 cup chicken broth (you can also use vegetable broth to keep this vegetarian)
* 1 cup low fat milk
* 1 cup grated Parmesan
* Salt and reshly ground pepper
* Chopped, fresh parsley, to garnish (optional)

AMAZING LOW FAT FETTUCCINE ALFREDO | Cheap Lazy Vegan
This is literally the best thing ever!!! It's definitely my new favourite thing to make, and I'm probably going to eat this WAY too much. Vegan fettuccine alfredo is something I've tried to create and master at least 2 or 3 times beforehand, and it just never was that satisfying. There was always something a little off and I never thought that it was as delicious as how I remembered regular fettuccine alfredo tasting.
I'm sure most of you know that regular fettuccine alfredo is full of heavy cream and is incredibly fattening!! Not to mention, we don't like to support the dairy industry -- so here is the most AMAZING vegan version of it. When I found out what the main ingredient was, I was incredibly skeptical which i'm sure some of you are. But I'm telling you that you need to try it. It's incredible and I can never stop eating this when I make it. This is one of those things that seem too good to be true, but it's actually not.
It's low in fat, yet still creamy and amazingly delicious. It doesn't make you feel tired and lethargic after you eat it and it's flavourful yet light. It's cheap as well (of course) and super easy to make!! What more could I ask for??
