How To make Maple Syrup Brown Bread
1 c cornmeal
1 3/4 c graham or whole wheat flour
1 tsp salt
1 tsp soda
1 c maple syrup
2 c buttermilk or sour milk
1 c seedless raisins
Mix the two flours, salt and soda. Add th emaple syrup to the milk and pour all at once over the dry ingredients.
Add the raisins and mix thoroughly. Pour into a well-greased 1 1/2 quart mould, cover loosely with foil. Place in a steamer, or on a trivet in a saucepan large enough to leave a space all around the mould. Fill the pan with water to halfway up the mould. Cover and steam over low heat for 3 1/2 hours. Or bake at 325 degrees for 1 hour, using 2 greased 4 X 8" breadpans. Cool on cake rack. Serve warm or warm up in the oven. It freezes well. Not necessary to thaw out, simple place the frozen loaf in a 350 degree F oven for 30 minutes or until hot.

Whole Wheat Cinnamon Twist with Maple Syrup
Sponge
1 ½ tablespoons or 18 g active dry yeast
¾ cup or 175 g warm water (105-115F)
1 cup warm butter milk (you can substitute with 1cup of milk plus 1 Tbs lemon juice or vinegar)
⅓ cup or 100 g pure maple syrup
3 cup or 390 g whole-wheat flour
Dough
¼ cup or 55 g melted unsalted butter
3 eggs
1 tablespoon or 20 g salt
3 ¼ to 3 ½ cups or 400-450 g bread flour
Cinnamon Smear
¾ cup or 165 g butter at room temperature
1 cup or 240 g packed light brown sugar
1 tablespoon or 7g ground cinnamon
1 cup or 100 g raisins
½ cup unsweetened apple juice
1 cup or 60 g chopped pecans or walnuts
1 teaspoon cornstarch, for glaze
Mix sponge ingredients, let it sit at room temperature for 30 min. Add dough ingredients and let it rise at room temperature for 1 ½ to 2 hours.
Make the cinnamon smear.
In a small saucepan, place the raising and the apple juice and bring to boil. Immediately remove from the heat and let it stand 15 min to plump. Drain the raisins.
Divide the dough and roll, spread cinnamon smear, sprinkle raisin on one and nuts on the other. Twist, cut it and put it in the bread pan. Let it rise 1 to 1 ½ hours. Heat oven 40 minutes before baking оn 375F. Bake for 20 minutes, brush the top with juice/water mix and bake for 10-15 minutes more till golden brown. Cool completely. Enjoy.
Cheesecake Factory Style Honey Wheat Bread: Bread Machine Only: No Forming or Baking.
This is an easier alternative recipe that also bakes in the bread machine. Normally, the bread machine is only used to make the dough for this kind of bread, but a subscriber (Gerry Wilson) wanted to see it baked using only the bread machine. With just a couple of minor changes, it worked pretty well. Admittedly, the crumb is better if baked in the oven, as demonstrated in my other video, but sometimes the bread machine might be your only option. The other issue with baking in the bread machine is that the crust may caramelize a bit because of all the sugars in the bread. After trying this on the medium crust setting, I would only do it again on light crust. The bread is still quite tasty, just be careful not to burn the crust. Enjoy.

Honey 1/4 Cup
Molasses 2 Tbs
Bread Flour 2 Cups
Whole Wheat Flour 1 1/2 Cup + 1 Tbs

Instant Coffee 1 Tbs
Unsalted Butter 2 Tbs
Rapid Rise Yeast 1 Pkg or 2 Tsp
Optional:
Vanilla 1/2 Tsp
Oats (For Topping) 2 Tbs

I have used both wholemeal bread (healthier choice) and white bread for this recipe..
Required Ingredients:
• 2 slices of wholemeal bread ( healthier choice)
• 2 slices of white bread
• some glaze of maple syrup
• some butter for toppings
I have used pan to toast the breads and if you own a toaster,you could use that too..
You may add honey instead of maple syrup if you are really cautious about calories..
