VEGETARIAN RED BEANS AND RICE!
My good friend Kara is in Town from New Orleans and she was kind enough to show me how to make some traditional New Orleans red beans and rice.
Recipe:
- 4 cups dried red beans (soak the beans in water according to the direction on the bag)
- white rice
- 1 bell pepper
- two white onions
- 4 celery stalks
- sausage or tofurkey
- 2 ts. dried oregeno leaves
- 2 ts. garlic powder
- 2 ts. thyme
- 2 ts. salt
- 1 ts. white pepper
- 1 ts. black pepper
- 1 ts. cayenne pepper
- canola oil
- 4 cloves garlic
All in One Instant Pot Rice and Red Beans Burito - Whole Plant Based
Today I am making a staple item in my starch based Dr. McDougall diet which I started on June 26, 2017. To date, September 22, 2018, I lost 94 pounds and my diabetes 2 is in remission (got rid of all insulin shots and pills). I get asked whether it is expensive to eat that way and if it is difficult to cook. Here is the answer: Stick with the basic staple items and add stuff to it based on how much weight you have to lose, your taste, and your needs, and your budget. All you need to buy to live teh McDougall way is oatmeal for breakfast with some fruit, a sack of beans, a sack of brown rice, a sack of potatoes and a sack of lentils. Add salad, spices and vegetables to your liking and eat until you are satisfied. No calorie counting, no portion control. Here is the recipe for whole plant based, oil-free, vegan Rice and Red Beans cooked in the instant pot and rolled into a Burito. Easy, cheap, and healthy, enjoy!
Rice and Beans all in one in instant pot:
Put instant pot on sautee mode and taking a little bit from 1 cup water, water sautee 1 chopped onion, 2 cloves of garlic 1 chopped red bell pepper Stop sautee mode. Then pour 2 cups of brown rice and 1 cup dry red beans (I soak them in water for a few hours but you can do it without soaking) into instant pot. Add 4 cups of vegan broth and the rest of the 1 cup water. Add 1 tbsp taco spice mix. 1 cup pico de gallo salsa. Add You can add 1/2 tbsp liquid smoke. Close lid, put valve on seal, press manual and 35 minutes. Give 10 minutes natural release when done. For the burito, warm a fat-free tortilla in a non stick pan for 30 seconds on each side. Put your beans and rice on the tortilla, add to your likeing: corn, cilantro, hot sauce, avocado, shredded Romaine. Roll up Burito-style and enjoy!
Instant Pot Beans & Rice in 30 Minutes!
In this video, I show you how to make beans and rice in the Instant Pot.
Ingredients:
- 1.5 cups dried black beans
- 1.5 cups brown rice
- 2 tbsp cumin
- 1.5 tbsp chili powder
- 1 tbsp smoked paprike
- 2 tbsp Better Than Bouillon
- 1/2 chopped onion
- 4 gloves garlic chopped
- 6 cups of water
- 1/2 juice of a lime
Instructions:
1. Saute the onion and garlic for a few minutes, adding a splash of water if needed.
2. Add the rest of the ingredients (except lime juice) and stir.
3. Cook on high pressure for 30 minutes, making sure the vent is sealed.
4. Allow the pressure to release naturally for 15 minutes before releasing any remaining pressure.
5. Add the lemon juice and enjoy!
