How To make Meat Loaf Tropicale
1 1/2 lb Lean Ground Beef
1 ea Egg; Lg
1 c Bananas; Ripe, Mashed, 2 Lg
1/2 c Oats; Quick Cooking
1/2 c Green Bell Pepper; Chopped
2 tb Onion; Chopped
1 ts Salt
1 ts Mustard; Prepared
1/4 ts Nutmeg
1/8 ts Allspice
2 ea Slices Bacon
3 tb Orange Marmalade
Heat the oven to 350 degrees F. Mix all of the ingredients, except the bacon and marmalade, together. Spread the mixture in an ungreased loaf pan, 9 X 5 X 3-inches. Crisscross the bacon slices on the top of
the meat mixture and spread the marmalade over the whole thing. Bake, uncovered for 1 to 1 1/4 hours. Drain off the excess fat and let stand for 5 to 10 minutes before slicing. NOTE: The bananas add a unique, almost mysterious flavor and a special moistness to this elegant meat loaf. -----

I take two savoury classics and fuse the together to create a guaranteed new family favourite that everyone will love. Beef is combined with breadcrumbs, onion, garlic and herbs, then topped with classic cheeseburger flavours including ketchup and mustard. Quick to make and quick to bake, these are great for dinner, as a party snack, picnic treat or just as something yummy to nibble on - give it a go!
INGREDIENTS:
500g of Beef Mince (leaner meat is best)
1/2 a Small Brown or Yellow Onion (diced)
2 Cloves of Minced Garlic (about 2 Teaspoons)
1 1/2 Cups of Fresh Breadcrumbs
2 Teaspoons of Mixed Dried Italian Herbs
1 Egg
Tomato Sauce / Ketchup
American Style Yellow Mustard
Grated Cheddar Cheese

INGREDIENTS

Callaloo filling:

1 bunch FRESH callaloo, diced - click here for callaloo prep ????
1 small - medium carrot, diced
1 small onion, diced
1 small tomato, diced
2 tsps thyme leaves or minced thyme
2 stalks scallion
1 tsp diced scotchbonnet
3 cloves garlic, minced
Caribbean brand of All purpose or chicken seasoning to taste
Salt to taste
Black pepper to taste
Garlic powder to taste
1 whole scotchbonnet(optional)

Dough (Cocobread):
--------------------------------
3 1/2 cups all purpose flour
1 1/4 tsp instant yeast
2 1/4 tbsps white sugar
1 1/2 tsp salt
3 tbsps melted butter, cooled down
1 large egg
1 1/4 cup coconut or cow's milk (lukewarm)

Extra flour for kneading is dough gets sticky
Olive oil for hands
Milk for brushing bread before baking
Melted Butter for brushing bread after baking(optional)
