RECIPES!
↠ Guacamole
◇ 2 ripe avocados
◇ 1-2 handful(s) of cilantro (chopped)
◇ 5-10 grape (or cherry) tomatoes (sliced - optional)
◇ Salt & pepper (to taste)
↠ Raw Sour Cream
◇ 1 1/2 cups raw cashews (soaked for 15-20 mins)
◇ 2 tsps apple cider vinegar
◇ 2 small lemons (juiced)
◇ 1/2 tsp pink Himalayan pink salt
◇ 3/4 cup water
↠ Raw Taco “Meat”
◇ 1 cup of walnuts
◇ 1 tsp coconut aminos
◇ 1/2 tsp chili powder
◇ 1/2 tsp onion powder
◇ 1/2 tsp garlic powder
◇ 1/4 tsp pepper
◇ 1/4 tsp salt
◇ 1/8 tsp paprika
◇ 1/8 tsp cayenne pepper
↠ Taco Salad Base
◇ 1/2 head iceberg lettuce (finely chopped)
◇ 1 cup cilantro (finely chopped)
◇ 1 cup green onion (chopped)
◇ 1 cup roma or on-the-vine tomato (chopped)
** Add sour cream + guacamole

Paprika Chickpea Taco- BEST Healthy Vegetarian/Vegan taco for taco tuesday-Spicy, flavorful & tasty!
Paprika Chickpea tacos are insanely delicious and healthy tacos are a must-try on taco Tuesday! I can’t believe i don't have a taco recipe up yet so i had to share this one first. They are healthy and just packed with so much flavor and a kick-off spice. I love the flavor of paprika with chickpeas and in a taco form who won’t?! These are ready in about 30 mins and is just a lifesaver on those crazy weeknights. I love assembling these tacos with lettuce, shredded cheese, sour cream, salsa, and hot sauce. It works with anything! You can even make the filling as a quesadilla and enjoy!

Servings: 6-8 tacos
Prep Time: 15 mins
Cooking Time: 20 mins
Total Time: 35 mins
Ingredients:
1 medium/ 1/2 cup Onion finely chopped
1/4 cup finely chopped bell peppers
1 Jalapeño chopped finely
1-2 Serrano chopped
1 tsp Paprika
1 -2 tsp Garlic powder
1 tbsp Ginger paste
1/4 tsp black Pepper
1 tsp Salt
1/2 -3/4 tsp Cumin powder
1.5-1.75 cup boiled Chickpeas
1.5 tsp Honey
6 -8 medium Corn tacos
3 tbsp cilantro
Lemon as a garnish
1 tbsp olive oil
Directions:
In a pan add olive oil. Add chopped onions and cook on low-medium heat. Cook for 6-8 mins till the onions start to brown.
Add chopped bell peppers, jalapeño and Serrano peppers and cook for 2-3 mins till they soften.
Add ginger paste and spice powders- paprika, garlic powder, cumin powder, pepper and salt, and mix it in. Cook for 1-2 mins.
Add 1 tbsp of water to deglaze if need be.
Add boiled chickpeas and and mix it till it comes together.
Add cilantro and mix it together.
Turn off the flame and add honey and mix.
Assemble in tacos with some lemon juice, sour cream, shredded cheese, lettuce, hot sauce and Salsa or condiments of your choice.

These walnut tacos are not only delicious but literally bursting with nutrients and health. Walnuts offer us healthy fat (including omega-3 fatty acids). Omega 3s can also have a beneficial effect on cardiovascular disease and depression. Walnuts are a great source of plant-based protein and contain vitamin B6, magnesium, and fiber. The combination of healthy fats, protein, and fiber in walnuts helps to increase satisfaction and fullness.

I'm also in the process of creating my own simple and easy to follow beginner friendly vegan cookbook. This cookbook will include simple recipes, replicating some of your favorite foods you are used to eating but veganized (yes, I said veganzied lol). Ingredients
2 cups of walnuts, soaked
1/2 onion diced
1/2 green bell pepper diced
1/2 red bell pepper diced
1 cup of baby bella mushrooms diced
2 tablespoons grapeseed oil
1 pack of taco seasoning (make sure you read the ingredients!)
spring water
Food processor
Directions
Soak 2 cups of walnuts in boiling hot spring water in a glass container for 20 mins to an hour.
Rinse walnuts then place soaked walnuts into food processor, add 1 pack of vegan taco seasoning and pulse to desired consistency.(3 to 4 times max
Add grapeseed oil to pan over medium to high heat and sauté peppers and onion for 5 – 10 minutes.
Add the walnuts and mushrooms and saute for an additional 5 to 10 minutes or to your liking.
Add in 1 – 2 tablespoons of spring water as needed while sautéing to maintain moisture of walnut meat.
Serve with tacos, pasta, nachos or any dish that calls for ground meat!
