RECIPE: Crockpot Lentil Taco Filling
INGREDIENTS:
5 cups water
2 cups lentils, dried
3 cups onion, diced
3 - 4 tablespoons taco seasoning mix, homemade
1 - 2 tablespoons garlic, minced
Salt (to taste)
Cooking spray
INSTRUCTIONS:
1: Spray crockpot or slow cooker with cooking spray.
2: Stir in the rest of the ingredients.
3: Cook on high 2 1/2 - 3 hours or until the lentils are as soft as you like them. Add salt to taste. Serve.
NOTES:
You can use 1 package (about 2.5 ounces) of store-bought packaged taco seasoning in place of the homemade .
This Lentil Taco Filling is delicious in tacos, burritos, with chips and on taco salads.

I'm also in the process of creating my own simple and easy to follow beginner friendly vegan cookbook. This cookbook will include simple recipes, replicating some of your favorite foods you are used to eating but veganized (yes, I said veganzied lol). Ingredients
2 cups of walnuts, soaked
1/2 onion diced
1/2 green bell pepper diced
1/2 red bell pepper diced
1 cup of baby bella mushrooms diced
2 tablespoons grapeseed oil
1 pack of taco seasoning (make sure you read the ingredients!)
spring water
Food processor
Directions
Soak 2 cups of walnuts in boiling hot spring water in a glass container for 20 mins to an hour.
Rinse walnuts then place soaked walnuts into food processor, add 1 pack of vegan taco seasoning and pulse to desired consistency.(3 to 4 times max
Add grapeseed oil to pan over medium to high heat and sauté peppers and onion for 5 – 10 minutes.
Add the walnuts and mushrooms and saute for an additional 5 to 10 minutes or to your liking.
Add in 1 – 2 tablespoons of spring water as needed while sautéing to maintain moisture of walnut meat.
Serve with tacos, pasta, nachos or any dish that calls for ground meat!

Cauliflower Taco Meat. Easy 1 Pan Cauliflower Walnut Filling. No Skillet needed

Tacos need a filling that is flavorful, has texture, is easy and versatile. This Cauliflower Walnut filling fits perfectly! All the flavor, all the texture! Change up the spices and herbs for variation in flavor.
Pulse the walnuts and onion in a food processor, then pulse cauliflower, spices. Then spread the mixture and bake until preferred consistency. No stove top cooking needed. 1 Processor to 1 baking dish.
Change up the flavors to preference. I use my own chili powder blend. Change that up with different Mexican chilies for flavor variation. Add some bbq sauce for bbq crumble and clumpier. Use Cajun blend or Jamaican jerk blend. This taco “meat” is bean and lentil free. Add some spiced beans or refried beans to the tacos if you like.
Use in tacos, wraps, burrito, nachos, salads! Vegan Glutenfree Soyfree Recipe. Can be nut-free.
