How To make Mediterranean Chicken &Amp; Figs
1/2 c Green bell pepper
1/2 c Red bell pepper
1/2 c Yellow bell pepper
1/2 c Mushrooms, quartered
1/2 c Yellow onion
4 Garlic cloves; minced
4 Chicken breasts
(skinless and boneless) 2 tb Olive oil
1/4 ts Coarse black pepper
1/2 tb Salt substitute
10 oz California dried figs
:
in bite-sized pieces 1 tb Fresh parsley, chopped
1 tb Fresh basil, chopped
1/2 c White wine
Clean and slice vegetables. Cut chicken into strips 2" x 1/4". Stir-fry chicken strips in olive oil in heavy saucepan over medium heat for 3 minutes. Add all vegetables and seasonings, except figs, parsley, and basil. Continue to cook for 15 minutes. Add figs, parsley, and basil and mix well. Add wine and continue to cook for another 2 minutes. Serve with your favorite green salad and whole grain rice. THE BEST BBQ MEDITERRANEAN CHICKEN!
THE BEST BBQ MEDITERRANEAN CHICKEN!
Easy to put together and tastes divine! Cooked ideally on the BBQ or in the oven. This is a lovely dish to serve up any day and anytime of the week:) Perfect with a flavorsome salad or with some sides.
BBQ SAUCE INGREDIENTS:
- Small tin of tomato purée (142g)
- 2tsp of garlic granule powder
- 3tsp of mixed herbs
- 1tsp of Celery Salt
- 2tsp of Classic BBQ Seasoning
- 1/3 of Hot Paprika
- 5tbs of Golden Syrup
- 2tbs of Pineapple Juice
- 5tbs of Malt Vinegar
- 2tbs of Worcestershire Sauce
- 2tbs of Extra Olive Oil
- 150g of water
METHOD:
1) Combine all the above ingredients together to create your homemade BBQ sauce
BBQ MEDITERRANEAN CHICKEN INGREDIENTS:
- 4 chicken boneless and skinless breasts
- 4 and a half tsp of Cumin
- 1 and a half tsp of Paprika
- Half a tsp of Allspice
- 1tsp of Garlic Granule Powder
- 1/3 tsp of Turmeric
- 1/3 Cinnamon
- A pinch Cayenne
- X4 tbs of BBQ sauce
- Half a lemon
- Handful of Parsley
- Salt and pepper (season to please)
METHOD:
1)Add all the above ingredients into the 4 chicken boneless and skinless breast. Combine all the ingredients together and poke the chicken with a fork.
2)Put foil on top of the bowl and leave to marinate in the fridge for 2-3 hours or ideally overnight.
3)Once marinated, set the BBQ and place the chicken on once hot! While the chicken is cooking you can use the left over marinated sauce to brush on top. You want to cooks the chicken for approx 9 mins on each side until brown and cooked. My BBQ doesn’t get too hot hot, so for you I would check the chicken every few minutes, as it might take quicker or longer to cook the chicken, depending on your BBQ heat.
4)Once the chicken is cooked, serve up with salad, any sides, potatoes, rice or whatever picks your fancy!

Za'atar Roast Chicken with Olives & Prunes
Za’atar roast chicken is a flavorful one-pan dinner that is full of flavor. It takes a few minutes to put together which makes this dish perfect for a weeknight dinner yet, fancy enough for a nice dinner party. Za’atar on its own packs a punch with the Mediterranean flavors of thyme, oregano, sumac, and sesame. The prunes and olives take it to another level with some sweetness and earthy goodness.
Print this recipe here:
1 chicken (3.5-4 lbs.) cut into quarters
¼ cup olive oil
¼ cup fresh lemon juice
1.4 cup fresh orange juice
4-5 large garlic cloves, grated
2-3 tablespoons harissa or pureed roasted red peppers
The spices:
• 4 heaping tablespoons za’atar
• 2 tablespoons sumac
• 1-1.5 teaspoons salt
• 1 teaspoon ground cumin
• Crushed red pepper flakes, to taste
1 cup prunes, dried apricots, or dried figs
1 cup olives
Preheat the oven to 425 °F, 220 °C.
Cut deep slits in the chicken pieces and place them in a 9 by 13-inch baking pan.
Combine the lemon juice, olive oil, orange juice, garlic, and harissa in a bowl. Whisk together and pour over the chicken.
Sprinkle all of the spices over the chicken and toss to coat.
Add the prunes and olives to the pan.
Bake in the center rack of the oven, uncovered, for 45 minutes.
Flip the chicken pieces over and bake 20-25 more minutes.
Serve with Mediterranean Rice Pilaf, Brussel Sprouts, Roasted vegetables, Couscous, or a salad with some toasted bread to soak up the zesty sauce. Enjoy!
