How To make Melba Cheesecake Pie
1/4 c Butter
1 1/4 c Graham cracker crumbs
2 tb Sugar
1 cn 16 oz Sliced Peaches,drained
1 pk Cream cheese 8 oz
1/3 c Sugar
1/2 c Sour Cream
1 Egg
1/2 ts Almond Extract
1/3 c Raspberry Jam
Microwave butter in pieplate,covered,for 1/2-1 minute on HIGH or until melted. Mix in crumbs and 2 tablespoons sugar;press onto bottom and sides of pie plate. Microwave on High for 1 1/2 to 2 minutes or until hot. Arrange peaches in crust. Microwave cheese in glass bowl 1 minute on MEDIUM,or until soft.Blend in remainding ingridients,except jam;pour over peaches. Microwave at High 3 1/2 -4 1/2 minutes or until edges are set,rotating once. Cool. Spoon jam on pie. or until soft. Typed for you by: Brigitte Sealing, Cyberealm BBS, Watertown, NY 315-786-1120

How to make Peach Melba Squares
250g pack unsalted butter
300g golden caster sugar
1 tsp vanilla extract
3 large eggs
200g self-raising flour
50g ground almonds
2 just-ripe peaches
, stoned, halved, then each half cut into 3
100g raspberries
handful flaked almonds
1 tbsp icing sugar, to finish
Butter and line a traybake or small roasting tin, about 20 x 30cm. Heat oven to 180C/160C fan/gas 4. Gently melt the butter in a large saucepan, cool for 5 mins, add the sugar, vanilla and eggs, then beat until smooth with a wooden spoon. Stir in the flour, almonds and ¼ tsp salt.
Tip the mix into the tin, then lay the peach slices evenly on top – that way each square of cake will have a bite of fruit. Scatter the raspberries and almonds over, then bake for 1 hr-1 hr 10 mins, covering with foil after 40 mins. Test with a skewer: the middle should have just a tiny hint of squidginess, which will firm up once the cake cools. Cool in the tin for 20 mins, then lift out onto a cooling rack. Once cold, dredge with icing sugar, then cut into squares

Raspberry Mini cheesecake bites -
Peach Melba Recipe:
1 ½ cups water
½ cup sugar
Some lemon zest
2 tbsp lemon juice
2 peaches
Ice cream as needed
Raspberry Sauce:
½ cup fresh raspberries
2 tbsp sugar
½ tbsp lemon juice
Method :
In a Pan bring in some water, star anise cinnamon stick , sugar lemon zest and lemon juice.
Let them come to slow simmer.
Drop in the peaches with seeds removed.
Cook them on one side until the skin is pale and cook them on the other side as well.
Remove from heat when peaches are cooked
For raspberry sauce :
Handful of raspberries , with sugar and lemon juice. Cook them down and filter the sauce to remove the seeds.You end with this gorgeous looking sauce that goes over the homemade peach melba .
Important Note :
Do not cook peaches on rolling boiling liquid . Just a slow simmer is what we need. We are poaching them and since I had peaches that were not completely ripe i cooked them for 3- 4 mins on each side.
This dessert is served with warm peaches and not cold ones.
So Cook the peaches and prepare the raspberry sauce in parallel.
