How To make Minted Couscous with Currants and Pine Nuts
29 ounces chicken broth
6 tablespoons butter
3 cups couscous
1/2 cup currants
1/2 cup pine nuts
toasted
4 green onion :
thinly sliced
1/4 cup fresh mint
2 tablespoons fresh dill -- minced
Bring broth and butter to boil in medium saucepan. Remove from heat; stir in couscous. COVER,let stand 5 minutes. Fluff couscous with fork. Transfer to bowl. Add currants, pine nuts, green onions, mint and dill; stir to blend. Season with salt and pepper.

Creamed Corn Mint Couscous This dish is great paired with Cindy's Sautéed Mint Salmon
Ingredients:
1 box of couscous
2 cups of low sodium chicken broth/ or water
1 cup of cream of corn
1 tsp of sea salt
1 tsp of fresh ground pepper
Optional 1/3 cup of grated parmesan cheese (Pat doesn't like cheese )
Directions: In a medium pan boil the 2 cups of chicken broth/ or water Pour in the couscous and remove from heat and cover Let sit for 5 min and then use a fork to mix Stir in the cream of corn, salt, and pepper Optional to add 1/3 cup of parmesan cheese Enjoy!

Mint leaves (Mentha cordifolia), which as we know not only has the benefits to freshen breath. Apparently more than that, mint leaves have many uses and are able to overcome some health problems, here are some of them: 1. Digestive System Mint leaves are healthy entrees. Why? Because mint condition capable of calming the stomach. The aroma of mint activates the saliva glands and the glands that produce digestive enzymes. As a result, our digestion become fluent. Skin care Mint juice is great when used as a face mask. In addition to the skin, infections, rashes, and acne can also be resolved. Mint can also cope with mosquito bites. 6. Oral health This is of course widely known benefits of mint leaves.
