How To make Mocha Pudding Cake
Butter-flavor no stick -cooking spray 1 1/3 c Granulated sugar, divided
1 c Unsifted all-purpose flour
1/4 t Salt
1/2 c Unsweetened cocoa, divided
2 t Baking powder
pn Cinnamon 1/4 c Canola oil
1/2 c 1% low-fat milk
1 t Vanilla
2 t Espresso coffee powder or
-regular or decaffeinated -coffee powder 1 c Boiling water
Position a rack in the center of the oven and preheat it to 350'F. Coat the baking pan with cooking spray. In a large bowl, combine 2/3 cup of the sugar, the flour, salt, 1/4 cup of the cocoa, baking powder and cinnamon, and stir well to blend. Whisk in the oil, milk and vanilla. The batter will be stiff. Scrape the batter into the prepared pan and smooth the top. In a small bowl, stir together the remaining 2/3 cup sugar and 1/4 cup cocoa. Sprinkle evenly over the cake batter. Dissolve the coffee powder in the boiling water and pour it over the batter. Do not stir. Bake for about 25-30 minutes, or until the top of the cake looks crisp and crackled, and a cake tester inserted in a "cakey" area comes out clean. Cool on a wire rack for about 5 minutes. Serve warm from this baking pan. Nutritional analysis: 342 calories, 4 grams protein, 10 grams fat, 0.8 saturated fat, 64 grams carbohydrate, 215 milligrams sodium, 1 milligram cholesterol; calories from fat: 25 percent.

Keto Layered Mocha Pudding [Sweet, Tasty Breakfast]
Going keto doesn’t mean giving up tasty desserts. This layered mocha pudding is easy to make and tastes amazing. It’s great for a dessert or to make as a snack during the day.
Whipping up this delicious treat just involves finding all of the ingredients and then using a blender to blitz them up. You start by making the coffee layer by blending up chia seeds, coffee, milk, and all the other ingredients and then pouring it into serving containers. Then all you need to do is make the vanilla layer by blending up all of those ingredients and then pouring the mix on top of the coffee layer in your serving containers. Simple as that.
This recipe is packed full of goodness. The chia seeds are high in fiber and have great antioxidant qualities, while almond milk is high in vitamin E and has a much lower calorie count than regular cow’s milk. It’s not all healthy though. The cocoa powder, coffee, and erythritol ensure this dessert drink is sweet and tasty.
If you prefer, you can add some extra goodness by adding a tablespoon of your favorite nut butter like almond butter and removing all of the artificial sweeteners if you enjoy a more straightforward coffee taste. THE PREPARATION
¾ cup butter, cut into large chunks
2 ounces unsweetened chocolate, chopped finely
½ cup heavy cream
2 tablespoons instant coffee crystals
1 teaspoon vanilla extract
4 tablespoons unsweetened cocoa powder
1/3 cup almond flour
1/8 teaspoon salt
5 large eggs
2/3 cup stevia/erythritol granulated sweetener
Butter or coconut oil spray to grease slow cooker
Optional: low-carb whipped cream or low-carb ice cream for serving.
THE EXECUTION
1. Grease a 4 to 6-quart slow cooker with butter or spray with coconut oil.
2. In small saucepan, melt butter and unsweetened chocolate over low heat, whisking occasionally. Remove from heat and allow to cool.
3. Whisk together heavy cream, coffee crystals, and vanilla extract in a small bowl.
4. Combine cocoa, almond flour, and salt in a small bowl.
5. Beat eggs in a large bowl with an electric mixer on high speed until slightly thickened. Gradually add granulated sweetener.
6. Beat on high speed until thick and pale yellow, about 5 minutes.
7. Turn mixer speed to low and slowly mix in melted butter and unsweetened chocolate mixture.
8. Stir in cocoa, almond flour and salt mixture.
9. Using mixer at medium speed, slowly add in cream, coffee, and vanilla mixture.
10. Pour batter into slow cooker.
11. Place a paper towel over the opening of the slow cooker before placing lid on top. The paper towel absorbs condensation.
12. Cook on low for 2-3 hours if using a 6-quart cooker or 2.5 to 3.5 hours if using a 4-quart cooker.
13. At the end of cooking, center will have a soft soufflé consistency while edges will be more cake-like. The center of the cake will be slightly damp on top, but will resist slightly when pressed. The center of cake needs to reach at least 160º F.
14. Serve garnished with whipped cream or low-carb ice cream, if desired.
