How To make Moghul Style Mixed Vegetables with Paneer
Stephen Ceideburg 3 tb Unsalted butter
1/4 c Mixed nuts (cashews and
-pistachios are good) 1/4 c Raisins
2 ts Minced garlic
1 lg Onion, finely chopped
1 Medium-size tomato, chopped
1/2 c Broccoli florets
1/2 c Cauliflower florets
1/2 c Green bell pepper, cut into
-1-inch diamonds 1/2 c Red bell pepper, cut into
-1-inch diamonds 1 Medium-size carrot, sliced,
-then cut into diamonds 1/4 c Green beans, cut in 1-inch
-diagonal pieces 1/4 c Peas (fresh or frozen)
1/4 ts Turmeric
1 ts Ground coriander
1 ts Ground cumin
1/2 ts Ground cardamom.
1/2 To 1 teaspoon cayenne pepper
1 ts Salt
1/4 c Water
8 oz Paneer (see recipe), cub- ed
-and broiled or sauteed 1/2 c Heavy cream
1/2 c Pineapple chunks (fresh or
-canned, drained) Heat 2 tablespoons of the butter in a large skillet over medium-high heat. Add nuts and stir-fry until brown. Remove with slotted spoon and set aside. Add raisins and fry until plump, remove and set aside. Add remaining butter to the skillet. Add garlic and onion and cook until lightly browned, about 4 minutes. Stir in tomato and cook until soft. Add remaining vegetables and stir-fry for 6 minutes. Stir in spices, salt and water. Bring to a boil, reduce heat, cover and cook until vegetables are tender, 8 to 10 minutes. Stir in paneer, cream and pineapple. Cook until heated through. Transfer to a serving dish. Garnish with fried nuts and raisins. PER SERVING: 350 calories, 13 g protein, 20 g carbohydrate, 26 g fat (15 g saturated), cholesterol (not available), 424 mg sodium, 3 g fiber. Ingredients:
1) Moong Dal / Muger Dal / Mung Dal.
2) Cauliflower.
3) Beans.
4) Carrots.
5) Green Peas.
6) Ginger Paste.
7) Dried Red Chilly.
8) Cumin Seeds.
9) Bay Leaves.
10) Green Chilli.
11) Garam Masala.
12) Chopped Tomato.
13) Salt.
14) Turmeric Powder.
15) Sugar.
16) Ghee.
17) Refined Oil.
Making of Mix Vegetable Dal Recipe:
Step 1 -Heat a pan then pour one tsp Ghee and fry the Moong Dal till brown.
Step 2 -Add Water, Green Chilly, half tsp Salt and cover it for 10 min. to boiled the Dal.
Step 3 -Take another bowl and add some refined oil. Heat the oil and add all vegetables one by one like cauliflower, beans, carrots, green peas. Also add some salt and mix it well. Close the lid till it become fried.
Step 4 -Take all fried vegetables in a bowl.
Step 5 -Add Bay Leaves, Garam Masala, Dry Red Chilli, Cumin Seeds on hot oil. After fry this mixture, add chopped tomato, ginger paste, 1 tsp turmeric powder, half tsp cumin powder, sugar and mix it very well. Add all fried vegetables in this mixture. Also add Cashew and Raisins.
Step 6 -Finally add boiled dal. Cook in high flame. Add some salt as per your taste.
Step 7 –Now close the lid and cook it for 5 minutes in low flame.

RESTAURANT STYLE SHAHI PANEER
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients
For Onion Tomato Puree
1 tbsp ghee
1 tbsp oil
1 tsp cumin seeds
1 inch cinnamon
2 cloves
2 green cardamom
1 black cardamom
1 bay leaf
2 green chili
1 tbsp ginger garlic paste
2 medium onion, cut into quarter
10-12 cashew nuts, soaked
4 medium tomato, cut into quarter
Salt to taste
¼ tsp turmeric
For Final Assembly
2 tbsp butter
1 tbsp kashmiri red chili powder
1 tsp coriander powder
Prepared Puree
250 gms paneer, cubed
¼ cup cream
1 tsp kasoori methi, crushed
Process
● Heat ghee in kadhai and add all the spices, followed by green chillies, ginger and garlic. saute for
a minute.
● Now add onion, cashew nuts and saute. Do not brown them and keep translucence.
● Add tomatoes, salt and turmeric; mix and saute for a minute. Now add ½ cup water; cover and
cook on low flame for 12-15 minutes. Stir it once again and allow it to cool.
● Now transfer this mixture into blender and blend until fine texture.
● Now pass this curry from the strainer to get that smooth and silky texture.
● Now heat butter in a non stick pan and add kashmiri red chilli powder and coriander powder.
Saute for a minute and add prepared curry. Stir gently for a while and add paneer cubes. Add
cream and sprinkle kasoori methi powder all over. Mix well and cook for another 2 minutes on
low flame.
● Before serving garnish with cream and sprinkle cardamom powder.
