How To make West: Mixed Vegetables Jaipur Style (Sabji Jaipuri)
Stephen Ceideburg 1 ts Cumin seeds
1 ts Coriander seeds
1 tb Mild vegetable oil
1 md Onion, sliced
2 tb Tomato paste
10 Whole cashew nuts
1 c Half-and-half
1 tb Ghee
5 Whole cloves
5 Cardamom pods
1 One-inch piece cinnamon
-stick 1 md Tomato, peeled, chopped
1/2 c Cauliflower florets
1/2 c Broccoli florets
5 Brussels sprouts, cut in
-half 1 md Carrot, cut into 2-inch
-sticks 1/2 c Diagonally cut green beans
1/2 c Water
1/2 ts Cayenne pepper
1/2 ts Salt, or to taste
1/4 c Raisins
Fresh mint sprigs for -garnish This makes a delicious and colorful vegetarian entree. Combine cumin and coriander in a small skillet and dry-roast over medium heat for 6 to 8 minutes. Remove and set aside. Heat oil in the same pan, add onion and stir-fry until brown, combine cumin-coriander, fried onion, tomato paste, nuts and half of the half-and-half. Blend into smooth past and set aside. Heat ghee in a heavy 2-quart saucepan over medium-high heat Add cloves, cardamom and cinnamon, stir until fragrant. Add tomatoes and cook until soft. Add remaining vegetables and stir-fry for 5 minutes. Stir in ground paste, remaining half-and-half, the water, cayenne, salt and raisins. Cover cook over medium heat until vegetables are tender. Garnish with mint sprigs and serve. PER SERVING: 150 calories, 3 g protein, 14 g carbohydrate, 70 g fat (5 g saturated) 21 mg cholesterol, 210 mg sodium, 3 g fiber. Kidney Beans/Rajma - 2 Tsp
Namak - taste ke according
4 tbsp ghee
2 tbsp oil
Shahi Jeera/Black Cumin - 1 Tsp

Cumin Powder - ½ Tsp
Coriander Powder - 1½ Tsp
Red Chili Powder - 1 Tsp (I like to add 2 tsp)

Besan - 1 tbsp

Half cup toordal(Pigeon pea)
2 Tblsps moong dal(Petite yellow lentils)
2 Tblsps masoordal(Red lentils)
1 Tsp finely chopped ginger
1/2 tsp finely chopped garlic
1 or 2 green chillies
1 t sp salt
1/4 t sp asafoetida (hing)
1/4 t sp turmeric powder
3 cup water
1 tea spoon oil
For making dal
1 tab sp oil
1 tab sp ghee
1 medium size onion finely chopped
1 finely chopped ginger
1/2 tea spoon finely chopped garlic
1 medium tomato
1/4 tsp Haldi powder
1/2 tsp Kashmiri red chilly powder
1/2 tsp Kithchen king masala
1 t sp salt
1/4 cup water
2 tblsps finely chopped coriander leaves (Dhaniya)
For tadka
1 tblsp oil
2 tsp jeera(Cumin seeds)
3 whole dry Kashmiri red chilly
1 tsp finely chopped garlic
1 pinch asafoetida (hing)
1 tblsp butter
1/2 t sp Kashmiri red chilly powder
Jeera rise:-
2 cup Basmati rise
8 cup water
3 Bay leaves (Tej patta)
1 black cardamom (Kali Elaichi)
4 green cardamom (Elaichi)
3 to 4 cloves ( Lavang)
2 stick Cinnamon (Dalchini)
1 Tsp salt
2 tsp oil
1 tblsp white vinegar
2 tblsps oil
1 tblsp ghee
1 tblsp Jeera(Cumin seeds)
1/2 cup coriander leaves (Dhania)
