• 1/2 cup raisins

• 1 cup hot water
• 3/4 cup (170 grams) unsalted butter, room temperature (1 1/2 sticks)
• 1 cup (200 grams) packed light brown sugar
• 1 large egg
• 1 1/2 teaspoons vanilla extract
• 3/4 cup (100 grams) all purpose flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon fine sea salt
• 1/2 teaspoon ground cinnamon
• 1/8 teaspoon fresh ground nutmeg
• 3 cups (270 grams) old-fashioned rolled oats

Apple Cranberry Bread
This is a delicious quick bread that is perfectly sweet and very simple to put together. I love the combination of the apple, pecans, orange zest and cranberries! The yogurt and the oil also makes this bread very moist. It’s best enjoyed warm with a cup of tea or coffee- making it the perfect breakfast or brunch treat. Feel free to smear a slice with butter for added richness ????
Dry Ingredients
1 ¼ cups flour
¾ cup sugar
1 tsp each baking powder, salt, cinnamon
½ tsp baking soda
Mix-Ins
½ cup chopped pecans (plus extra for sprinkling on top)
½ cup quick oats
½ cup chopped dried cranberries
Wet Ingredients
1 cup chopped apple
½ cup vegetable oil/ melted butter
½ cup yogurt/ sour cream
2 large eggs
2 tsp vanilla extract
2 tsp orange zest
Directions
1. Preheat oven to 350°F and grease a 9-by-5-inch loaf pan.
2. In a bowl measure and prepare dry ingredients. Add mix-ins (oats, pecans, cranberries) to bowl with dry ingredients and stir to incorporate.
3. In a separate bowl prepare wet ingredients.
4. Then stir wet ingredients into dry ingredients until just combined. Do not overmix.
5. Spread the batter into the prepared pan and sprinkle with additional chopped pecans.
6. Bake until a toothpick inserted into the centre comes out clean- about 40 to 55 minutes and the bread is golden brown.
7. Cool bread in pan on a wire rack for about 10 minutes, then turn onto the rack to cool completely. Enjoy warm.

INGREDIENTS
- 4 apples, cored and sliced (peel optional)
- 4 pears, cored and sliced (peel optional)
- 2 cups cranberries, washed and dried
- 1/4 cup chopped crystallized ginger
- 1/2 cup white granulated sugar
- 2 tbsp cornstarch
- 1 tsp cinnamon
- 2 tsp orange zest
- 1/4 cup fresh orange juice
For the streusel:
- 3/4 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 cup light brown sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 tsp ground ginger
- 12 tbsp unsalted butter
INSTRUCTIONS
- Preheat the oven to 350°F. Grease a 9×9 baking dish and set it aside.
- In a large bowl, mix the sliced apples, pears, cranberries, and crystallized ginger. Add the sugar, cornstarch, cinnamon, orange zest, and orange juice. Stir to combine. Natural juices from the fruit will begin to collect. Pour the fruit and any juices into the prepared baking dish.
- In a medium bowl, mix the oats, flour, brown sugar, cinnamon, salt, and ground ginger. Add the pieces of butter and toss to coat each piece of butter in the dry mixture. Use thumb and forefinger to work the butter into the mixture until the pieces of butter are no bigger than the size of a pea and the consistency is like wet sand.
- Sprinkle the streusel mixture over the prepared filling. Bake in the preheated oven until the center of the filling is bubbling and the streusel is browned, 55-75 minutes. Once it is baked, remove the crisp from the oven and cool for 30 minutes before serving.

1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained
