CRUSTLESS QUICHE RECIPE
(makes 8 slices)
Ingredients:
1/2 cup red bell pepper, finely chopped (75g)
1/2 cup green onions, finely chopped (50g)
1/2 cup sweet potato, grated (75g)
1 cup cheddar cheese, grated, or any other melting cheese (100g)
5 eggs
1 cup cottage cheese (225g)
1/2 cup milk (120ml)
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
158 calories, fat 8.6g, carb 7.9g, protein 12.3g
Preparation:
In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 8 equal pieces.
Serve and enjoy!

INGREDIENTS
400g shortcrust pastry
1 tbsp unsalted butter
3 leek, thinly sliced
250g spinach
4eggs, lightly beaten
200g cheddar cheese, grated
100g parmesan cheese, grated
250ml double cream
200ml milk
1red pepper, roasted and sliced into thin strips
black pepper, to taste
INSTRUCTIONS
Preheat an oven to 180C and grease a tart tin.
Roll the shortcrust pastry to 2cm thick and lay the pastry into the tart tin, press into sides of the tin. Cover the pastry with clingfilm and refrigerate for 30 minutes.
Place a medium saucepan on a high gest, add the unsalted butter, leek and salt. Cover the saucepan and cook for 3 minutes, stirring occasionally.
Stir the spinach into the saucepan and cook for 2 minutes. Strain the cooked leek and spinach into a mixing bowl to remove the excess moisture.
Remove the shortcrust pastry from the refrigerator and line with baking beans. Place the pastry in the preheated oven and blind bake for 15 minutes.
Then remove the baking beans and bake for a further 8 minutes.
In a mixing bowl whisk together the eggs, grated cheddar, grated parmesan, double cream, milk, cooked leek and spinach, black pepper and salt.
Pour the egg mixture into the baked quiche tart. Lay the thinly sliced red peppers across the top from the centre to the edge.
Transfer the red pepper quiche to the oven and bake for 40 minutes until set.
Remove the quiche from the oven and allow to cool for 15 minutes, release the red pepper quiche from the tart tin and serve.

Spinach and cheese Quiche - this recipe so delicious and rich! Good for special occasions, parties and birth days. Instad of gruyere cheese you can use any kind of cheese like, such as cheddar.

Ingredients:
For the crust:
2¼ cups (280g) flour
3/4 cup (170g) cold butter, cubed
1 teaspoon salt
4-6 tablespoons cold water
For the filing:
14 oz (400g) fresh spinach
1 yellow onion
1 red onion
2 garlic cloves, crushed (optional)
3 eggs
1 cup (240 ml) heavy cream
7 oz (200g) gruyere cheese
3oz (90g) blue cheese such as gorgonzola
1/2 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon nutmeg
Butter + olive oil for frying
Method:
1. In a food processor process flour, salt and cold cubed butter. process until crumbs are formed. Add cold water, process until dough is formed. Do not over mix.
2. Transfer the dough to a work surface, pat into a ball and flatten into a disk. Wrap in plastic and refrigerate for 30 minutes.
3. Meanwhile make the filling: chop onions. In a large pan, melt 2 tablespoons butter and some olive oil. Add chopped onions and sauté for 5 minutes. Add crushed garlic and spinach. Cook until wilted and reduced in size. Drain.
4. In a large bowl beat eggs, heavy cream, salt, pepper and nut meg. Set aside.
5. Roll out the dough on a lightly floured board. Lightly dust the top of the dough. Roll until the dough is about 1/8 inch thick. Transfer the dough to a 9-10-inch (24-25cm) pie pan. evenly press the pastry onto the bottom and up the sides of your pan. Trim off the excess dough off the top of the pan. Gently pierce the bottom of the crust with a fork. Transfer to the freezer for 30 minutes.
6. Preheat oven to 350F (175C)
7. Blind baking: line a parchment paper over the dough. Fill with dry beans, rice or pie weights. Bake for 15 min. Remove the weights and the parchment paper. Return to oven for another 5-10 minutes or until crust is slightly golden. Remove from oven.
8. Sprinkle the spinach into the pie crust, sprinkle shredded gruyere cheese and cubed blue cheese. Pour the eggs and cream mixture over the spinach and cheese.
9. Bake until golden brown and set, about 35 minutes. Allow to cool slightly.
