How To make Oat Pecan Pralines
1 c Butter or margarine;
-softened 1 1/4 c Brown sugar, packed
2 Eggs
2 tb Molasses
1 ts Maple extract
1 1/4 c All-purpose flour
1 ts Baking soda
2 1/2 c Rolled oats
(quick-or old fashioned 1 c Pecans; coarsely chopped
3/4 c Pecan halves
Recipe by: Woman's Day, Holiday Baking 1994 In a large bowl with an electric mixer on medium speed, beat the butter and sugar until fluffy. Add teh eggs, molasses and maple extract; beat well. Add the flour and baking soda; mix well. Stir in the oats and chopped pecans; mix well. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. Preheat oven to 350 degrees; lightly grease cookie sheets. Shape the dough into 1-inch balls; place 3 inches apart on the prepared cookie sheets. Press a pecan half in the center of each ball. Bake for 10 to 12 minutes, or until a deep golden brown. Immediately remove to wire racks to cool. Penny Halsey (ATBN65B). -----

I have never tasted pecan pralines before making these and to me they taste like fudge with a lot of pecans in them. I always thought they were more like a pecan brittle texture :)

RECIPE:
1 cup (211g) white granulated sugar
1 cup (225g) packed brown sugar
1 cup milk (240ml)
8 large marshmallows
2 cups (230g) coarsely chopped pecans
2 tbsp (34g) butter
1/2 tsp (2.5ml) vanilla extract
dash ground cinnamon
Lightly grease a couple of cookie sheets or cover with parchment or a silicon mat.
In a medium saucepan over medium/low heat combine the sugars, milk and marshmallows. Cook and stir until marshmallows are melted. Raise heat to medium and continue to cook, stirring occasionally until the temperature reaches 234F to 235 F (112 to 115C) (soft ball stage).
Without stirring or scraping transfer the mixture into a heat proof container. You don't want to scrape the pot because the sugar crystals on the pot sides may get into the mixture and cause it to crystallize too quickly.
Add the butter, vanilla extract and cinnamon.
Stir rapidly until the mixture thickens up and gets creamy. This may take 3-4 minutes. Once it starts to thicken, quickly start dropping the mixture by tablespoonfuls onto your prepared cookie sheets. Allow them to hardens and store them in sealed containers. Makes about 2 dozen depending on size. I would stick to making very small ones as they are super super sweet.
