HOW TO MAKE OAT MILK | + oatmeal pulp chocolate chip cookie recipe
Oat milk is a delicious, dairy-free milk that is crazy easy to make. It's nut-free, low in fat, very affordable and comes together in just minutes. Let me show you the best way to make rich and creamy homemade oat milk (that is NOT slimy!) PLUS I'll show you how to make my oatmeal pulp chocolate chip cookies!
Oat milk has been gaining in popularity lately and for good reason. It's rich, creamy, and delicious PLUS it's a plant based, nut-free alternative to milk.
It's also a relatively inexpensive milk to make and you don't need any fancy equipment to make it. And my absolute favorite thing about homemade oat milk?? You can make oatmeal chocolate chip cookies with the leftover oat pulp. #SoGood

OAT MILK RECIPE
1 cup rolled oats
4 cups filtered water
1 teaspoon vanilla extract
1 tablespoon maple syrup
1 pinch kosher salt
INSTRUCTIONS
Add the oats and water to a high-speed blender (or any blender you have) and blend until the oats have broken down and the liquid looks creamy, about 30 seconds to a minute. Do not blend more than needed or the oat milk will get slimy.
Add the vanilla, salt, and maple syrup. Blend for an additional 3-5 seconds.
Pour the liquid through a nut bag or over a fine mesh strainer. Gently pull the bag up and let the milk drip through.
Allow the milk to strain through at its own pace. If you try to squish or push the milk through, the milk will get slimy.
Store in an airtight container in your fridge for up to 5 days.
OAT MILK RECIPE:
OAT PULP COOKIE RECIPE
1 cup almond butter, all natural, creamy + unsalted
3/4 cup monk fruit, or preferred granulated sweetener
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon kosher salt
1/3 cup oat pulp, leftover from oat milk
3/4 cup chocolate chips
INSTRUCTIONS
Pre-heat oven to 350F + line a rimed baking sheet with parchment paper or a silpat mat.
Start with a new jar of room temperature almond butter (or make your own). Be sure to stir any oil that pools at the top back into the almond butter. You want the almond butter to be smooth, creamy and almost pourable.
In a large bowl, combine almond butter, monk fruit, egg, oat pulp, vanilla, baking soda and salt. Stir everything together until you have nice thick cookie dough.
Add in chocolate chips and gently stir so they are evenly distributed throughout the batter.
Scoop up about a tablespoon of the batter and drop it on a prepared baking sheet. Repeat until you have used all the dough. You will need to work in batches or use two baking sheets.
Bake for 12 minutes or until golden brown on top. Cool completely before removing from the baking sheet. They are very delicate when hot, so this is an important step. Enjoy!
NOTES
*Monk fruit is a plant-derived, calorie free sweetener. This is the one I am using. If you prefer, you can use coconut sugar or really any granulated sugar in its place. Coconut sugar and turbinado sugar are two of my favorites.

CHOCOLATE OATMEAL BARS | Recipe With Sweetened Condensed Milk
Hi there! Do you like chocolate chip cookies? I mean, who doesn't - but it you do, here is a recipe to spice up your baking! From the chewy oatmeal, to the gooey chocolate, you might like these bars even more than chocolate chip cookies. I cut this recipe in half. So, the link to the recipe is for the full batch, while my ingredients list, below, is for a half batch.
Recipe:
What You'll Need:
- 1/2 cup plus 1 tablespoon butter, softened, divided
- 1 cups brown sugar, light or dark works
- 1 egg
- 2 tsp vanilla extract, divided
- 1 1/2 cups old-fashioned oats
- 1 1/4 cups all-purpose flour
- 1/4 +1/8 tsp baking soda
- 1/4 and 1/8 tsp salt, divided
- 1/2 can (14 ounces) sweetened condensed milk
- 1 cup semisweet chocolate chips (I used dark chocolate)
- 1/2 cup chopped pecans (I used sliced almonds)
What You'll Do:
1. In a large bowl, cream together the butter and sugar
2. Add the egg and 1 tsp of vanilla into your butter-sugar mixture, and stir until combine. Set aside
3. In a medium bowl, combine oats, flour, baking soda, and 1/4 tsp salt. Stir.
4. Add your oats-flour mixture into your butter-sugar mixture. Stir until combine. Set aside.
5. Preheat oven to 350 degrees.
6. In a medium sauce pan, over medium-low/low heat, combine chocolate chips, sweetened condensed milk, 1 tablespoon of butter, and 1/8 tsp of salt. Stir until the chocolate is melted, and the mixture is smooth. Once the mixture is melted and smooth, add 1 tsp of vanilla extract. Stir until incorporated. Remove the chocolate mixture from the heat. Lastly, if desired, stir in 1/2 cup of chopped nuts.
7. Take an 8 in. x 8 in. or 9 in. x 9 in. baking pan. Press 1 1/2 cups of the dough mixture evenly into the bottom of the pan. Take the chocolate mixture, and spread it evenly on top of the dough layer in the bottom of your pan. Lastly, drop the remaining dough on top of the chocolate layer, as desired (you can drop little ball of the dough all around, on top of the chocolate, or you can do as I did in this video, and create another dough layer on top of the chocolate).
8. Bake the bars in your oven, for 30-35 minutes. If you like a little bit of uncooked dough, 30 minutes is perfect. If you don't like any uncooked dough, go for the 35 minutes. And if you don't like a dark, crunchy top, consider covering your bars with foil, as they bake.
9. Let cool, and enjoy! (Preferably with a scoop of vanilla ice cream!)

Ingredients:
110g or 1/2 cup melted butter
1 cup brown or white sugar
1 egg
1 tbs vanilla
3/4 all purpose flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup rolled oats
1/4 cup chocolate chips or nuts
Direction:
1. Mix butter and sugar in a bowl.
2. Add egg and Vanilla and stir.
3. Sift flour, cocoa powder, baking powder and salt and add to butter mixture.
4. Stir oats and nuts.
5. Scoop and drop into cookie sheet. Flatten cookies.
6. Bake for 11-12 minutes at 350 degrees F. Cookies will be slightly moist in the center. Do not over bake.
