Almond and Orange Blossom Cake / كعكة اللوز وزهر البرتقال - CookingWithAlia - Episode 816

RECIPE:
INGREDIENTS:
For the almond biscuit:
1 whole medium egg
2 egg yolks
70g granulated sugar
110g almond powder
25g all-purpose flour
55g butter
2 egg whites
30g of granulated sugar
For the orange blossom cream:
200g mascarpone
100g cold heavy cream
10g icing sugar
1 teaspoon orange blossom water
For decoration:
Orange Jam
Orange slices
Macarons
DIRECTIONS:
Step 1: Preparing the almond biscuit
1- In a bowl, place the whole egg, the 2 egg yolks and 70g of granulated sugar. Mix well using an electric egg beater until you get a thick texture.
2- Add the almond powder, flour, and melted butter. Mix well with a spatula.
3- In a different bowl place the egg whites and using an electric egg beater, beat while adding the 30g of granulated sugar little by little until you get a thick shiny meringue that forms peaks.
4- Add this egg white mixture to the first mixture, and gently combine using a spatula.
5- Place the batter in a medium circular mold and bake in a preheated oven at 180C / 350 F. The cake is ready when it has a nice golden color and when you touch the center of the cake it should feel firm. Remove the cake from the oven and let cool down completely before removing from the mold.
Step 2: Preparing the orange blossom cream
6- In a bowl, place all the cream ingredients, and using an electric egg beater, mix until the cream has a thick texture.
7- Place the cream in a piping bag to use immediately or keep in the fridge until ready to finalize the cake.
Step 3: Assembling
8- Spread a layer of orange jam on top off the cake.
9- Pipe the cream on top of the jam layer.
10- Finally decorate with orange slices, candied oranges, and macarons.

Brownie Ingredients:
butter for greasing the pan
130g flour (1 cup)
60g cocoa powder (2/3 cup), preferably dutch-process
113g melted unsalted butter (1 4-oz stick/8 tablespoons)
53g canola oil (1/4 cup)
30g orange blossom water (2 tablespoons)
3 large eggs (155g)
350g sugar (1 3/4 cup)
3g salt (1/2 teaspoon)
80g coarsely chopped raw pistachios (1/2 cup)
1 tablespoon finely ground pistachio, for sprinkling
orange blossom cocoa cream cheese frosting ingredients:
40g cocoa (1/2 cup)
175g powdered sugar (1 1/2 cups)
56g unsalted butter (4 tablespoons), softened at room temperature
227g cream cheese (1 8 oz stick), softened at room temperature
23g orange blossom water (1 1/2 tablespoons)
Bake: 375F/175C
Bake time: 35 minutes
Recipe summary: Grease an 8x8 pan and line with parchment paper. Sift your flour and cocoa powder together. Add the sugar, eggs, salt to a large bowl. Beat until pale and thickened. Combine the butter and olive oil together in a small bowl. Fold into the egg mixture. Fold the flour/cocoa mixture into the wet batter in two batches. Pour into pan and bake for 35 minutes at 350F/175C. Let cool for 20 minutes. Remove from pan & parchment paper.
For the optional frosting, combine ingredients in this order: cocoa, then sugar, then butter. On top of all that, add the cream cheese and the orange blossom water. Whisk on low speed until combined. Then increase to high speed for fluffing. Spread onto brownies and sprinkle with more pistachios.

Learn how to make orange frosting to make festive cakes, cupcakes, and cookies for fall! I will show you two ways how to make two shades of orange frosting using only orange gel food coloring and the difference of using red & yellow gel food coloring. My favorite way is using red & yellow gel food coloring because it creates a more vibrant shade of orange and is more of a pumpkin orange. Americolor gel food coloring is my favorite gel food coloring since you only need a few drops to make vibrant colored frosting with any of their gel food colors. If you would like a darker shade of orange, continue to add equal drops of red & yellow gel food coloring or use a toothpick to add a small amount of color to the frosting. Allowing the frosting to sit overnight will also help enhance the color.
