How To make Orange Cheesecake and Strawberries

CRUST----- 1 cup Finely crushed vanilla wafer
1 1/2 teaspoon Ground cinnamon
1 tablespoon Egg white
Vegetable-oil cooking spray CHEESECAKE:
16 ounce Low-fat cottage cheese
8 ounce Neufchatel cheese room temp*
1/3 cup Sugar
1 tablespoon Flour
2 tablespoon Orange juice
1 1/2 teaspoon Grated orange zest
1 teaspoon Vanilla
1 lg Navel orange :
sectioned
membranes removed 1 pint Ripe strawberries -- slice thin
Preheat oven to 350 F. Combine the vanilla wafer and cinnmon in a bowl. In a separate bowl, whisk the egg white until foamy, blend it into the crumbs with a fork. Spray a 9-inch springform pan with a vegetable-oil cooking spray. press the crumbs in an even layer in the bottom of the prepared pan. Bake 10 minutes. Cool. reduce the oven temperature to 300 F.
In the bowl of a food processor, combine the cottage cheese, cream cheese, sugar, flour, orange juice, orange zest and vanilla extract until very smooth. Spoon into the prepared crust and smooth the top with a rubber spatula. Bake until set in the center, about 35-40 minutes. Cool in the pan.
Refrigerate until cold. Loosen the sides of the cake with a small rubber spatula and remove the pan rim.
Combine the orange sections and strawberries. Cut the cheesecake into thin wedges and spoon some fruit on each serving. Makes 12 servings with 137 calories per serving.

Strawberry Blood Orange Cheesecake
Strawberry-blood orange cheesecake
16 oz cream cheese
1/4 cup sour cream
2/3 cups granulated sugar
2 eggs
2 tablespoons blood orange reduction
1/3 cup strawberry puree
Whip together cream cheese, eggs, sugar, and sour cream with the reduction first. Fold in the puree. Pour over the cooled crust, and bake at 325 degrees F for 50 minutes. Cool in the oven, turned off, for another 10 minutes, before moving to room temperature to prevent cracking (this happened in my cheesecake unfortunately).
Cornflake crust:
1 1/2 cups cornflakes
4 tablespoons butter, melted
blood orange peels
Melt butter with orange peels. Blitz cornflakes. Strain out peels and mix together. Press into the bottom of a lined baking tin and bake at 350 degrees F for 10 minutes.
Blood orange reduction:1 blood orange
Juice the blood orange and add in the peels. Reduce by half, remove the peels, then continue reducing to about 2 tablespoons’ worth of liquid. Make sure this is chilled before using.
Strawberry puree:
1 1/2 cups chopped strawberries
1/2 cup water
orange peels
Remove leaves and reserve those for the simple syrup. Reduce berries, orange peels, and water until the berries begin to soften immensely and turn light-pink. Strain out the berries and peels, pressing to extract as much of the pectin as possible, and continue to reduce until there is about 1/2 cup’s worth of puree left. Chill before using. 1/3 cup of the puree will be for the cheesecake, while the rest will be for glazing.
Strawberry leaf simple syrup
2 blood oranges’ worth of peels
strawberry leaves, baked at 350 degrees F for 6 minutes
water
1/4 cup sugar
Combine ingredients, bring to a simmer for 10 minutes, and strain out the solids.
Candied blood orange peels:
1 blood orange, sliced into 1/16th in thick pieces
Strawberry leaf simple syrup
Poach the orange slices in the syrup for about 4 minutes, or until the pith becomes opaque. Reserve the syrup for glazing fresh berries with. Bake at 350 degrees F for 25 minutes.

Orange Cheesecake Cups
FILLING:
1 ⅓ cups raw cashews (soaked for min. 2 hrs)
3 pitted medjool dates
1 ½ tsp vanilla extract
½ cup fresh orange juice
2 tsp orange zest.
CRUST:
1 cups walnuts or other nut of choice
2 pitted medjool dates
1/2 tsp vanilla extract
Instructions:
Combine crust ingredients in a food processor and process to a semi-coarse crumb. Lightly press the crust into 2 glass cups or bowls .
Combine filling ingredients in a blender and blend until smooth. Pour filling over the crust and smooth it with a spatula. Freeze for 1-2 hours or until firm.
Garnish with orange zest, or dehydrated orange slices.

Ingredients:
Crust:
Butter melted 113g (1/2 cup) 4 oz.
Salt 3g 1/2 tspn
Graham crumbs 229g
Filling:
Cream cheese 491g (1 lbs.) 16 oz.
