1 1/2 c All-purpose flour
2/3 c Granulated sugar
1 ts Cinnamon
1 ts Baking powder
1/4 ts Salt
1/4 ts Cloves
1/4 ts Nutmeg
2/3 c Soft butter or margarine
1/2 c Orange marmalade
3 Eggs
1/3 c Milk
1 tb Fresh lemon juice
1/2 c Chopped walnuts or pecans
Preparation time: 10 min. Baking time: 55 to 60 min. Oven temperature: 350 degrees F. This is a nutty, old-fashioned spice cake traditional in the South. When made with raspberry or blackberry jam it's called " Jam Cake". For one Bundt cake, 10 to 12 servings, you will need: Vanilla wafer crumbs Sliced oranges, for garnish Caramel Frosting: Combine 3/4 cup light brown sugar, 1/4 cup whipping cream, 2 teaspoons dark corn syrup, and a pinch of salt in a saucepan. Add 2 tablespoons butter. Bring to a boil. Boil until syrup reaches 234 degrees F on a candy thermometer or until a drop in cold water forms a soft ball. Beat until cooled and creamy. Preparation: 1. In the large bowl of an electric mixer, combine the flour, sugar,
cinnamon, baking powder, soda, salt, cloves, nutmeg, butter, marmalade, eggs, milk, lemon juice and nuts. 2. Blend at low speed, scraping the bowl. Increase speed to medium
and beat for 2 minutes. 3. Butter an 8 1/2-inch (10-cup) tube type pan. Dust with vanilla
wafer crumbs. 4. Pour batter into the prepared pan.
5. Bake at 350 degrees F for 55 minutes or just until a skewer
inserted in the center comes out clean. 6. Remove from the oven. Cool 5 minutes.
7. Turn out of pan and finish cooling on a rack.
8. Glaze with Caramel Frosting and garnish with sliced fruit.

It is Summer here and I am baking my orange marmalade cream cheese cake. It is a deliscious recipe and I hope you get the opportunity to make it. It is well worth it moist, with the orange marmalade flavor this is over the top amazing. This recipe you could split up into 3 cake rounds however I am just making 2 and we thought it was perfect. Orange Cake Batter Ingredients Used:
3 large eggs
1 yellow cake mix box
1 cup of orange juice
about 6 tablespoons of orange marmalade
1/2 cup of vegetable oil
Cream Cheese Orange Marmalade Frosting Ingredients:
2 cups of confectionary sugar
1- 8oz cream cheese softened
1/2 stick of butter softened
3 tablespoons of orange juice
3/4 cup of orange marmalade (I used just under a cup)
Garnish: Fresh orange sliced for decoration
Bake Cake at 350 degrees for 25 minutes
Let Cake cool frost decorate and enjoy the best Summer cake ever!

ORANGE MARMALADE CAKE:
INGREDIENTS for a 1lb / 450g loaf tin:
8oz / 225g plain flour
Pinch of salt
one tablespoon (15 ml) baking powder
4oz / 100g butter
2oz / 55g caster sugar
2 eggs, beaten
3 tablespoons (45 ml) orange marmalade
2-3 tablespoons (32-45 ml) fresh milk
METHOD:
·Pre-heat oven to 180 C / 350 F / Gas Mark 4
·Sieve flour into bowl
·Rub in the butter, finely
·Add the sugar
·Mix in the beaten eggs and milk to make a soft batter
·Grease and line your baking tin with baking parchment
·Pour mixture into the baking tin
·Place in the oven for about an hour
·Test it is ready by placing a skewer or cocktail stick in the centre. It should come out clean if the cake is ready/cooked.
·Leave in the tin for 5 minutes and then turn out to cool
TOP TIPS:
·Orange marmalade with rind adds a nice texture to the cake
·Double up the ingredients if you want to make a larger cake!

250g self-raising flour
1 tsp ground mixed spice
175g unsalted butter
175g soft brown sugar
Zest and juice of 1 orange
3 eggs
2 tbsp thick marmalade
75g mixed dried fruit
2 tbsp milk
To make your own self raising flour!
Sift 2 teaspoons baking powder to each 150g plain or all purpose flour.
